Add the fish broth into a saucepan and heat with a medium heat
At the same time, heat a large fry pan with a medium heat and add in the olive oil
After a couple of minutes add the noodles into the fry pan, mix continuously, after 3 to 4 minutes and the noodles are golden fried, remove them from the pan and set aside, making sure to reserve the olive oil in the pan
Using the same pan with the same heat, add in the chopped garlic, mix continuously, after 30 seconds to 1 minute and the garlic is fragrant, add in the paprika, quickly mix together, then add in the grated tomatoes, chopped parsley, and season with salt & pepper, mix together and then simmer
After 4 to 5 minutes and the grated tomatoes have slightly thickened, add the fried noodles back into the pan, then grab the simmering fish broth and gently add over the noodles, mix together until well mixed and then simmer
In the meantime make the garlic aioli, add the chopped garlic into a mortar and a pinch of sea salt, using a pestle pound down on the garlic until you get a paste-like texture, then add in the egg yolk and lemon juice, start mixing continuously in a circular motion while slowy adding the olive oil, once all the olive oil has been added and you have a mayonnaise like consistency, season with salt & pepper, mix together and set aside
After simmering the noodles for about 8 minutes and all the broth has been absorbed, place a lid on the pan and turn off the heat, let it sit for 3 to 4 minutes, this will ensure all the noodles are cooked through
Once the noodles are cooked, transfer into serving dishes, top off with a dollop of the garlic aioli, and some chopped parsley, serve at once, enjoy!
