Spanish Poor Man's Beans and Potatoes | Alubias con Patatas a lo Pobre

Ingredients

  • 3 tbsp extra virgin olive oil 45 ml
  • 1 medium onion (roughly chopped)
  • 5 cloves garlic (roughly chopped)
  • 1 medium potato (peeled)
  • 1 tsp sweet smoked Spanish paprika 2.50 grams
  • 3/4 tsp ground cumin 2 grams
  • 2 tomatoes (finely grated)
  • 1 jar white beans (same as canned) 25 oz / 700 grams
  • 2 cups vegetable broth 480 ml
  • 1 bay leaf
  • 2 tsp lemon juice 10 ml
  • sea salt & black pepper
  • fresh parsley for garnish

Instructions

  1. Heat a large fry pan with a medium heat and add in the olive oil

  2. After a couple of minutes add in the chopped onion and garlic, mix together, then mix every 1 to 2 minutes so everything evenly sautes

  3. In the meantime, cut the potato into small bite-sized pieces that are a 1/4 inch (.635 cm) thick

  4. After 5 minutes and the onions are translucent add in the chopped potato, mix together, then mix every 1 to 2 minutes

  5. Once the potatoes are lightly fried, about 5 minutes, add in the paprika and cumin, quickly mix together, then add in the grated tomato, and season with salt & pepper, mix together and then simmer

  6. After 5 minutes and the grated tomato has slightly thickened, add in the jarred white beans (drained and rinsed), vegetable broth, and bay leaf, then turn it up to a high heat and give it a mix

  7. Once it comes to a boil place a lid on the pan and lower to a low heat, simmer for 10 minutes or until the potatoes are just cooked through, then turn off the heat, add in the lemon juice, and mix together

  8. Transfer into shallow bowls and garnish with fresh parsley, enjoy!
