20-Minute Pasta with Cherry Tomatoes & Shrimp | Quick & EASY Recipe

This 20-Minute Pasta with Cherry Tomatoes & Shrimp is the perfect dish for any occasion. It’s packed with flavors, made with minimal ingredients and done in about 20 minutes. Serve it next to a crunchy baguette and a bottle of Spanish wine for an incredible meal.

To make this dish, I used penne pasta. But you can use any type of pasta you like. Just make sure to check the package instructions, that way you cook your pasta perfectly al dente. I like to make the sauce while the pasta is cooking. But you can always cook the pasta first and then the sauce.

What really flavors the sauce, which is the cherry tomato and shrimp mixture, is the white wine. If wine or alcohol in general is not your thing. Just use any type of broth you like with a squeeze of fresh lemon juice. This is what gives this dish that deep depth of flavors.

TIPS & TRICKS to Make this Recipe: You can make this dish ahead of time and add into the fridge. It will hold for up to 3 days. When reheating, just add in some broth or some of the water the pasta was cooked in. This will ensure the pasta is not dry and bring the dish back to life.

20-Minute Pasta with Cherry Tomatoes & Shrimp

Ingredients

  • 2 tbsp extra virgin olive oil 30 ml
  • 6 cloves garlic
  • 10 oz cherry tomatoes 300 grams
  • 10 oz raw medium sized shrimp (peeled and deveined) 300 grams
  • 1 tsp dried oregano 1 gram
  • 1/2 cup dry white wine 120 ml
  • 2 1/4 cups penne pasta 225 grams
  • handful fresh parsley
  • pinch sea salt
  • dash black pepper

Instructions

  1. Fill a stock pot a little over halfway with water, season generously with sea salt and heat with a high heat

  2. In the meantime, pat the shrimp dry with paper towels, then season with sea salt & black pepper, roughly chop the garlic, cut the cherry tomatoes in half and roughly chop the parsley, also heat a large fry pan with a medium heat

  3. Once the water comes to a boil, add in the pasta, mix every 2 to 3 minutes so the pasta evenly cooks and doesn't stick together

  4. While the pasta is cooking, add in the extra virgin olive oil into the hot fry pan, immediately add in the chopped garlic, mix continuously

  5. After 1 minute and the garlic is fragrant, add in the cherry tomatoes and mix continuously, after 3 minutes and the tomatoes are lightly sauteed, add in the dried oregano and season with sea salt & black pepper, mix, then add in the white wine, mix and simmer

  6. Once the alcohol has been cooked off, about 3 minutes, add in the shrimp and mix continuously, after 1 to 2 minutes and the shrimp are cooked through, turn off the heat

  7. Once the pasta is cooked al dente, check the pasta cooking instructions, transfer directly from the stock pot into the fry pan with the tomatoes and shrimp, then add in 2 tbsp (8 grams) chopped fresh parsley and mix

  8. Serve directly out of the fry pan or transfer into serving dishes, enjoy!

    Too funny! It’s 9am and i was thinking about what I want to make for dinner.
