AMAZING Egg Sandwich on Garlic Toast | EASY Breakfast in 10 Minutes
This Egg Sandwich on Garlic Toast is truly what comfort food is all about. It´s filled with simple yet delicious flavors, made with minimal ingredients and done in just 10 minutes. Serve it for breakfast or even for dinner, next to a piece of fruit and a refreshing mimosa.
To make this recipe I used regular white sandwich bread. But you can use any type of bread you like. Either way, make sure to fry the bread on a medium heat and nothing higher. This will allow the pieces of bread to get that golden color without getting too crispy.
I fried the eggs the Spanish way. Which is a light crispy texture underneath with a creamy yolk. The secret? Add the eggs into the hot pan and don´t touch them. After 1 to 2 minutes and they have developed a crispy texture underneath, splash some of the hot oil over the yolk, just for a few seconds.
TIPS & TRICKS to Make this Recipe: When soaking the pieces of bread in the egg and garlic mixture, make sure to get plenty of the garlic in the bottom of the bowl and spoon over the bread. Otherwise, the garlic will stay in the bottom and not go on the bread.

Egg Sandwich on Garlic Toast
Ingredients
- 1/4 cup extra virgin olive oil 60 ml
- 4 slices sandwich bread
- 4 eggs
- 3 cloves garlic
- 2 tbsp chopped parsley 8 grams
- 2 slices white cheddar
- 1 tomato
- pinch sea salt
- dash black pepper
Instructions

Heat a large fry pan with a medium heat and add in the olive oil

In the meantime, crack 2 eggs into a shallow bowl, finely grate in 3 cloves of garlic, add in the parsley and season with sea salt & black pepper, whisk together until well mixed

Coat the slices of sandwich bread in the egg mixture and add into the pan with the hot olive oil (cook in batches of 2), fry for 2 minutes per side or until golden fried all around, then transfer into a dish with paper towels

Using the same pan with the same heat, crack in the other 2 eggs, fry for 2 minutes or until the egg whites are set and the yolks are creamy, then remove from the pan, season with sea salt & black pepper

To assemble the sandwich, add a slice of cheese over one of the garlic breads, then add a couple thin slices of tomato and finally 1 fried egg, top off with the other garlic bread, serve at once, enjoy!
