Spanish Guisantes con Jamón

These Spanish peas with ham, known as “guisantes con jamón,” are one of Spain’s most popular homemade recipes. They’re filled with flavors, easy to make, and done in just 20 minutes. Serve them as a tapas appetizer or even as a side dish, next to some pan-grilled fish and roasted potatoes. Either way, they promise to fill you with so much goodness.

To make this recipe, I used frozen peas. Which gives this dish the best flavor and texture. You can also use canned peas if you like. Just make sure to drain them into a colander, rinse them under water, and simmer them for just a few minutes instead of 5 to 7 like the frozen peas. Otherwise, they will get a mushy texture.

As for the ham, I used Spanish jamón ibérico. Which is similar to prosciutto but with a deeper flavor. Of course, you can use other types of cured hams if you prefer. Either way, make sure to add the ham at the end once the heat is turned off. Otherwise, it will get a tough texture.

TIPS & TRICKS to Make this Recipe: You can serve these peas warm or at room temperature. They will hold for up to 2 to 3 days in the fridge in an airtight container. When reheating, just add in a splash of broth to bring back the sauce.

Spanish Peas with Ham | Guisantes con Jamón

Ingredients

  • 3 tbsp extra virgin olive oil 45 ml
  • 1 medium yellow onion (finely chopped)
  • 4 cloves garlic (roughly chopped)
  • 1/2 tbsp all-purpose flour 4 grams
  • 1/4 cup dry white wine 60 ml
  • 1/2 cup chicken broth 120 ml
  • 1 lbs. frozen peas 450 grams
  • 2.5 oz sliced Spanish jamon Iberico (similar to prosciutto) 70 grams
  • sea salt & black pepper

Instructions

  1. Heat a large fry pan with a medium heat and add in the olive oil

  2. After a couple of minutes, add in the chopped onion and garlic, mix continuously

  3. After about 4 minutes and the ingredients are lightly sautéed, add in the flour, continue to mix together for 1 minute, then add in the white wine, mix together, and then simmer for a few minutes

  4. Once the alcohol has cooked off in the wine, about 2 to 3 minutes, add in the chicken broth and gently mix together until there are no lumps in the sauce

  5. When it comes to a simmer, add in the frozen peas, mix together until well mixed, then place a lid on the pan and lower to a low-medium heat, and simmer

  6. In the meantime, cut the sliced Spanish jamón into small bite-sized squares

  7. After simmering the peas for 5 to 7 minutes and they're just tender, season with salt & pepper, mix together, then turn off the heat, add in the Spanish ham, and gently mix together

  8. Serve warm or at room temperature, enjoy!
