In the region of Catalonia, this bread is served with everything and anything. I love to make Pan con Tomate when I make a Tortilla Espñola. The flavors work so well together, it´s my favorite meal ever! So simple, yet so tasty. The secret will be to use high quality extra virgin olive oil. Pan Con Tomate – Catalan Tomato Rubbed Bread
Prep Time 5 minutes
Cook Time 5 minutes
Total Time 10 minutes
Ingredients
- 1 Baguette
- 3 Ripe Tomatoes
- 2 Cloves of Garlic
- Extra Virgin Olive Oil
- Fresh Parsley
- Sea Salt
Instructions

Pre-heat oven to 210C - 410 F
-
Cut baguette diagonally in one inch thick slices

Add the sliced bread to a baking tray with foil paper

Lightly drizzle extra virgin olive oil over each slice of bread
-
Broil and Bake in the oven between 2-3 minutes and remove from oven

Cut all three tomatoes in half
-
Cut both garlics in half
-
Place cooked bread slices on a plate
-
Rub the garlic on each slice of bread
-
Rub the tomatoes on each slice of bread
-
Season each slice of bread with sea salt to your liking
-
Sprinkle some freshly chopped parsley over each slice of bread
-
Drizzle a good helping of high quality extra virgin olive oil on each slice of bread
