In the region of Catalonia, this bread is served with everything and anything. I love to make Pan con Tomate when I make a Tortilla Espñola. The flavors work so well together, it´s my favorite meal ever! So simple, yet so tasty. The secret will be to use high quality extra virgin olive oil. Pan Con Tomate – Catalan Tomato Rubbed Bread

Prep Time 5 minutes
Cook Time 5 minutes
Total Time 10 minutes

Ingredients

  • 1 Baguette
  • 3 Ripe Tomatoes
  • 2 Cloves of Garlic
  • Extra Virgin Olive Oil
  • Fresh Parsley
  • Sea Salt

Instructions

  1. Pre-heat oven to 210C - 410 F
  2. Cut baguette diagonally in one inch thick slices
  3. Add the sliced bread to a baking tray with foil paper
  4. Lightly drizzle extra virgin olive oil over each slice of bread
  5. Broil and Bake in the oven between 2-3 minutes and remove from oven
  6. Cut all three tomatoes in half
  7. Cut both garlics in half
  8. Place cooked bread slices on a plate
  9. Rub the garlic on each slice of bread
  10. Rub the tomatoes on each slice of bread
  11. Season each slice of bread with sea salt to your liking
  12. Sprinkle some freshly chopped parsley over each slice of bread
  13. Drizzle a good helping of high quality extra virgin olive oil on each slice of bread
  14. Enjoy!
