When I started working on a salad that made smoked salmon the star, I knew instantly I had to work with goat cheese and spinach, just because all these flavors work so well together. The real kicker here was adding the roasted red bell peppers, they added a whole new dimension of flavors that really worked well with the smoked salmon. – Homemade Lemon Herb Dressing –
The best part about this Smoked Salmon and Spinach Salad with Lemon Herb Dressing….is well the dressing! Seriously, when I first made this salad I just topped it off with some extra virgin olive oil…and it was so good!!! But then I decided to take things up a notch. As we all know lemon and dill work extremely well with salmon, so I decided to make a really simple and quick herb dressing to enhance the flavors of the salad. The result was this amazing homemade lemon herb dressing that just took this salad to the absolute next level. The dressing just brought all the flavors together and it only takes like 2 minutes to make! Smoked Salmon and Spinach Salad with Lemon Herb Dressing
Ingredients
- 2 cups spinach
- 1/2 red onion
- 3 roasted peppers
- 6 black pitted olives
- 3 slices smoked salmon
- 2 ounces goat cheese
- pinch sea salt
- pinch black pepper
- 2 tbsp extra virgin Spanish olive oil
- 1/2 tbsp lemon juice
- 1/2 tsp dried dill
- 1/2 tsp dried parsley
Instructions

Tightly pack 2 cups of bagged spinach into a cup (I used my pyrex 2 cup glass cup), then transfer the spinach into a cutting board and roughly chop it, add the cut spinach to a shallow bowl, finely dice 1/2 of a red onion and add on top of the spinach, grab 3 jarred roasted red peppers and pat them down with some paper towels, then roughly dice them and add them on top of the spinach, thinly slice 6 black pitted olives and add them on top of the spinach

Grab 3 slices of smoked salmon, one by one roll each slice up like a cigar, cut it right down the middle and start chopping it, add the chopped smoked salmon on top of the spinach, finally grab about 2 ounces of soft goat cheese and crumble it over the salad, season everything with sea salt and freshly cracked black pepper and garnish with a slice of fresh lemon

To make the herb dressing add 2 tablespoons of extra virgin Spanish olive oil to a bowl along with 1/2 a tablespoon of fresh lemon juice, 1/2 teaspoon of dried dill, 1/2 teaspoon of dried parsley and a kiss of sea salt, whisk everything together until well combined and then drizzle the dressing over salad
