Classic Spanish Salmon and Peas | Quick & EASY One-Pan Recipe
This Spanish salmon and peas, known as salmón con guisantes, is what the Spanish Mediterranean kitchen is all about. It’s packed with flavors, made with simple heart-healthy ingredients, and done in about 20 minutes using one pan. Serve it next to some roasted potatoes and a bottle of Spanish white wine for a fabulous meal.

To make this recipe, I used fresh salmon fillets. But you can also use the frozen stuff. Just make sure to fully thaw out beforehand. Either way, make sure to gently pat the salmon completely dry. This way, it absorbs all the flavors in the pan and doesn’t water down the dish.

As for the rest of the ingredients, I used onions, garlic, white wine, chicken broth, and frozen peas. You can sub the white wine for white grape juice or any broth of your choice with a squeeze of fresh lemon juice. As for the peas, make sure to add them into the pan frozen. As this is when they’re at their peak freshness.

TIPS & TRICKS to Make this Recipe: My salmon fillets were on the smaller side. If you are using larger salmon fillets, sear them for 2 minutes per side instead of 1 minute, and then finish them in the sauce as I did. This dish will hold for up to 2 to 3 days in the fridge. When reheating, just add in a splash of broth to bring it back together.

Spanish Salmon and Peas | Salmón con Guisantes
Ingredients
- 3 tbsp extra virgin olive oil 45 ml
- 4 salmon fillets 4 oz / 115 grams each
- 1 medium yellow onion (thinly sliced)
- 6 cloves garlic (thinly sliced)
- 1/2 cup dry white wine 120 ml
- 1 bay leaf
- 1/2 cup chicken broth 120 ml
- 1 cup frozen peas 140 grams
- sea salt & black pepper
- chopped parsley for garnish
Instructions

Heat a large fry pan with a medium heat and add in the olive oil

In the meantime, lay the salmon fillets over some paper towels and gently pat dry, then season with salt & pepper on both sides

Once the oil is nice and hot, add in the salmon fillets, all in a single layer, and lightly sear for just 1 minute per side, then remove from the pan and set aside

Using the same pan with the same heat, add in the sliced onion and sliced garlic, mix together, then mix every 1 to 2 minutes so everything evenly sautés

After 6 to 8 minutes and the onions are slightly translucent, add in the white wine, bay leaf, and season with salt & pepper, give it a mix, and then let it simmer

Once the alcohol has cooked off from the wine, about 3 minutes, add in the chicken broth and raise it to a high heat, give it a gentle mix

When it comes to a light boil, add in the frozen peas and mix together until well mixed, then gently add the salmon fillets back into the pan, once again in a single layer, and gently flip each one so they're fully coated in all that goodness, and then place a lid on the pan and lower to a low-medium heat, and simmer for 3 to 4 minutes or until the salmon is cooked through and the peas are tender

Transfer into serving dishes and top off with chopped parsley, enjoy!
