Spanish Chorizo and Eggs

These Spanish chorizo and eggs, known as duelos y quebrantos, are seriously what comfort food is all about. We’re talking easy to make, a ton of great flavors, and all done in about 15 minutes. Serve this dish for breakfast, lunch, or even dinner. And always next to a crunchy baguette for the ultimate Spanish treat.

Spanish Chorizo and Eggs

To make this recipe, I used uncured Spanish chorizo. You can use any type of chorizo you like. Just make sure it’s firm. Otherwise, when you cook it, it will lose its shape and fall apart. As for the eggs, I used cage-free organic eggs. But any type of eggs can be used. However, the higher the quality of the ingredients, the better the overall flavor.

As for the rest of the ingredients, I added some sliced onions and sliced garlic. Which is very typical of this dish. You can omit these ingredients if you like. If you want a spicy kick, either use spicy chorizo or add a pinch of crushed red pepper to the whisked eggs.

TIPS & TRICKS to Make this Recipe: The secret to this dish is to not overcook the eggs. About 2 to 3 minutes while mixing continuously on a low heat should do the trick. If you overcook the eggs, they will end up with a rubbery texture. And remember, when you remove the pan from the heat, the eggs continue to cook.

Spanish Chorizo and Eggs | Duelos y Quebrantos

Ingredients

  • 1 tbsp extra virgin olive oil 15 ml
  • 8 oz firm Spanish chorizo 225 grams
  • 1 medium yellow onion (thinly sliced)
  • 4 cloves garlic (thinly sliced)
  • 8 large eggs
  • sea salt & black pepper
  • chopped parsley for garnish

Instructions

  1. Heat a large fry pan with a medium heat and add in the olive oil

  2. In the meantime, cut the chorizo into 1/2-inch (1.25 cm) pieces

  3. Add the chopped chorizo into the hot fry pan, mix together, and then mix every 1 to 2 minutes

  4. After 5 to 7 minutes and the chorizo is lightly browned and cooked through, remove it from the pan and set it aside

  5. Using the same pan with the same heat, add in the sliced onion and garlic, mix together, and then mix every 1 to 2 minutes so everything evenly sautes

  6. In the meantime, crack the eggs into a bowl, season with salt & pepper, and whisk together

  7. After 6 to 8 minutes and the onions are slightly translucent, season with a kiss of salt & pepper, mix together, then lower to a low heat, add the chorizo back into the pan and the whisked eggs, gently mix continuously, just like you would a typical scramble, and go for 2 to 3 minutes or until the eggs are just cooked through, then immediately remove from the heat

  8. Transfer into serving dishes and top off with chopped parsley, enjoy!
