BEST-EVER Fried Tomatoes with Panko & Manchego Cheese

Once again, we´re going to grab a very basic & humble ingredient and create an extraordinary dish. Today´s star? The beautiful tomato. I present to you the BEST-EVER Fried Tomatoes with Panko & Manchego Cheese.

These fried tomatoes have the most incredible flavor, the dish is super easy to make and it all comes together in 20 minutes. You can serve these fried tomatoes as a tapas appetizer, as a side dish or even for breakfast, next to a couple of fried eggs.

To make this dish, I used large tomatoes on the vine, but you can use any tomatoes you like. I also used panko bread crumbs. These bread crumbs don´t absorb as much oil as regular bread crumbs when you fry them. Which is what give these tomatoes that incredible crunch.

TIPS & TRICKS to make this Recipe: To fry the tomatoes, I used sunflower oil, but you can use any neutral vegetable oil. I also fried the tomatoes on a medium heat, that way the bread crumbs don´t burn. The secret here is to fry the tomatoes for about 2 minutes per side. This is enough time to give the bread crumbs that crunchy texture without over-cooking the tomatoes.

BEST-EVER Fried Tomatoes with Panko & Manchego Cheese

  • 4 large tomatoes
  • 1 cup panko bread crumbs 63.4 grams
  • 1 tsp dried thyme .91 grams
  • 1 tsp dried oregano 1.01 grams
  • 1 tsp garlic powder 3.28 grams
  • 1/4 cup oat milk 67.5 ml
  • 1/2 cup all-purpose flour 64 grams
  • 1/2 cup sunflower oil 118 ml
  • Manchego cheese
  • pinch sea salt
  • dash black pepper
  • handful freshly chopped parsley


  1. Wash and pat dry 4 large tomatoes, cut each one into rounds that are between 1/2 inch to 1/4 inch thick (1.27 cm to .64 cm), season each slice of tomato with a kiss of sea salt and freshly cracked black pepper on both sides

  2. Add 1 cup of panko bread crumbs into a bowl, along with 1 tsp of dried thyme, 1 tsp dried oregano, 1 tsp garlic powder, 1/2 tsp sea salt and 1/8 tsp black pepper, mix together until well combined

  3. Add a 1/4 cup of oat milk (or any milk you like) into a seperate bowl and 1/2 cup all-purpose flour into another bowl

  4. To coat each slice of tomato, first dust it off in the flour, then into the milk and then into the panko bread crumbs, as you finish each one transfer to a dish

  5. Heat a large frying pan with a medium heat and add in 1/2 cup sunflower oil, after 4 minutes start adding the coated slices of tomato into the pan, make sure they are in a single layer, cook in batches, after 2 minutes flip to cook the other side, after a total cooking time of 4 minutes remove from the pan and transfer to a dish with paper towels, cook until all the tomatoes are fried

  6. Once all the tomatoes are fried, finely shred some Manchego cheese on top of each slice of fried tomato, sprinkle with freshly chopped parsley and serve at once, enjoy!
