
“Better than Coleslaw” Spanish Garlic Cabbage Salad
This Spanish Garlic Cabbage Salad, known as Ensalada de Col Andaluza, is possibly the best cabbage recipe I have ever tasted. We’re talking a ton of great flavors, easy to make, and all done within minutes. Serve it as a side dish next to some pan-grilled fish and a bottle of Spanish wine for a delicious meal.
To make this recipe, I used a head of green cabbage. You can also use red cabbage if you like. Either way, once you slice the cabbage, make sure to salt it and let it rest while you make the dressing. This will extract the water from it. Which will remove any raw flavor and help keep its crunchy texture.
What really flavors this dish is the dressing. Made with olive oil, sliced garlic, sherry vinegar, paprika, and cumin. Make sure to use a great extra virgin olive oil here. As it’s what really makes the difference.
TIPS & TRICKS to Make this Recipe: You can serve this cabbage salad at room temperature or even chilled. It will hold for up to 3 to 4 days in the fridge in an airtight container.

Spanish Garlic Cabbage Salad | Ensalada de Col Andaluza
Ingredients
- 1 head green cabbage 1.5 lbs / 675 grams
- 1/4 cup extra virgin olive oil 60 ml
- 8 cloves garlic (thinly sliced)
- 1 tbsp sherry vinegar 15 ml
- 1 1/2 tsp sweet smoked Spanish paprika 4 grams
- 1/2 tsp ground cumin 1.5 grams
- sea salt & black pepper
- chopped parsley for garnish
Instructions

Remove between 1 to 2 of the outer leaves from the head of cabbage, then cut the head into 4 evenly sized pieces, cut off the core from each piece, and then slice each piece into slices that are 1/4 inch thick (.635 cm)

Add the sliced cabbage into a strainer and rinse under water, then add into a salad spinner and spin completely dry, you can also add the sliced cabbage over a dishcloth and pat dry, transfer the sliced cabbge into a large bowl and season with salt, set aside

Heat a fry pan with a medium heat and add in the olive oil

After a couple of minutes add in the sliced garlic, mix continuously, after 1 to 2 minutes and the garlic is lightly browned, add in the sherry vinegar, paprika, cumin, and season with salt & pepper, turn off the heat and mix together

Drizzle the olive oil mixture over the sliced cabbage, mix together until well mixed

Transfer into a large serving dish and sprinkle with chopped parsley, enjoy!

17 . May . 2025Made this according to the recipe. It tasted fantastic, definitely more than the sum of its parts. It was a big hit with the family. Would be great as a topping on a leftover grilled fish sandwich or saussage on a bun. Lots of potential and will make this again!

04 . May . 2025This is a simple easy but yet a delicious coleslaw without the mayo. I always like an oil and vinegar dressing for all of my veggie salads. I bet this would have been even better with a Spanish brand paprika. There is a brand from Spain I would like to try but can’t get it here in Canada or on Amazon.ca . Amazon(USA) has the brand but doesn’t ship to Canada unfortunately. My EVOO is cold pressed from Spain though. I only buy EVOO that is from Spain. 😊
