“Better than Donuts” CRISPY Spanish Dessert Fritters
These crispy Spanish dessert fritters, known as tortitas crujientes con azucar, have a light crispy texture with a delicious interior, are made with basic pantry staples, and done in just 30 minutes. Serve them as a dessert or even for breakfast, next to a couple of fried eggs for a sweet & savory treat.

To make the batter, I used a combination of all-purpose flour and cornstarch. You can use other types of flour besides all-purpose, such as almond flour, chickpea flour, or even oat flour. As for the liquid, I used low-fat milk, but you can also use full-fat, nonfat, or even a plant-based milk.

What truly flavors these fritters is the extra virgin olive oil. Of course, you can use other types of oil or even butter if you like. But I tell you, by using extra virgin is what gives these fritters that beautiful lift of goodness.

TIPS & TRICKS to Make this Recipe: It took me about 3 minutes per side to crisp up the fritters. It might take you less or more. Just ensure the heat is on medium and nothing higher. Otherwise, the fritters will brown too quickly on the outside and not fully cook on the inside.

CRISPY Spanish Dessert Fritters | Tortitas Crujientes con Azucar
Ingredients
- 1/3 cup extra virgin olive oil 90 ml
- 2/3 cup all purpose flour 80 grams
- 1/3 cup cornstarch 40 grams
- 1 tsp baking powder 4 grams
- 2 tbsp granulated sugar 25 grams
- 1/2 tsp cinnamon powder 1.25 grams
- 1/4 tsp sea salt 1.50 grams
- 2 eggs
- 1/3 cup low fat milk 90 ml
- 1 lemon
- powdered sugar for dusting
Instructions

Add the flour into a large bowl, along with the cornstarch, baking powder, granulated sugar, cinnamon powder, and salt, whisk together until well mixed

Make a well in the middle, crack in the eggs, and whisk the eggs, then add in the milk, and whisk it all together until you get a thick batter with no lumps, then add in a kiss of lemon zest, and give it one final whisk

Heat a large fry pan with a medium heat and add in the olive oil

After a couple of minutes, start adding in spoonfuls of the batter, you want all the fritters in a single layer and evenly spaced, cook in batches, fry for 3 minutes per side or until golden and crispy, then transfer into a dish with paper towels, and top off with a kiss of powdered sugar while still hot

Once all the fritters are done, transfer them into a serving dish and serve immediately, enjoy!
