
“Better than Takeout” Fried Garlic Noodles | Quick & EASY Recipe
These Spanish fried garlic noodles, known as Rossejat de Fideus, are possibly the best fried noodles I have ever tasted. We’re talking a ton of great flavors, easy to make, and done in about 30 minutes. Serve them as a main course or even as a side dish next to some pan-grilled fish.
To make this recipe, I used spaghetti-cut fideos, known in Spain as fideos. If you can’t find them in your area, you can just use regular spaghetti and break it into small pieces. As for the liquid, I used Spanish fish broth from Barcelona. You can also use vegetable broth or even chicken broth.
For the aioli, I made a homemade version using a mortar & pestle. If you prefer, you can take the mayo shortcut. Just add some mayonnaise into a bowl, finely grate in a couple cloves of garlic, add some lemon juice and olive oil, and whisk together.
TIPS & TRICKS to Make this Recipe: Once the noodles have absorbed all the liquid in the pan. Place a lid on it and turn off the heat. By trapping the steam in there, it will ensure all the noodles are cooked through.

Spanish Fried Garlic Noodles | Rossejat de Fideus
Ingredients
FOR THE FRIED GARLIC NOODLES
- 2 1/2 cups fish broth 600 ml
- 1/4 cup extra virgin olive oil 60 ml
- 2 cups noodles (fideo cut spaghetti) 8 oz / 180 grams
- 6 cloves garlic (roughly chopped)
- 1/2 tsp sweet smoked Spanish paprika 1.25 grams
- 2 tomatoes (finely grated)
- 2 tbsp chopped parsley 8 grams
- sea salt & black pepper
FOR THE GARLIC AIOLI
- 3 cloves garlic (roughly chopped)
- 1 egg yolk
- 1 tsp lemon juice 5 ml
- 1 cup extra virgin olive oil 240 ml
- sea salt & black pepper
EXTRAS
- chopped parsley for garnish
Instructions

Add the fish broth into a saucepan and heat with a medium heat

At the same time, heat a large fry pan with a medium heat and add in the olive oil

After a couple of minutes add the noodles into the fry pan, mix continuously, after 3 to 4 minutes and the noodles are golden fried, remove them from the pan and set aside, making sure to reserve the olive oil in the pan

Using the same pan with the same heat, add in the chopped garlic, mix continuously, after 30 seconds to 1 minute and the garlic is fragrant, add in the paprika, quickly mix together, then add in the grated tomatoes, chopped parsley, and season with salt & pepper, mix together and then simmer

After 4 to 5 minutes and the grated tomatoes have slightly thickened, add the fried noodles back into the pan, then grab the simmering fish broth and gently add over the noodles, mix together until well mixed and then simmer

In the meantime make the garlic aioli, add the chopped garlic into a mortar and a pinch of sea salt, using a pestle pound down on the garlic until you get a paste-like texture, then add in the egg yolk and lemon juice, start mixing continuously in a circular motion while slowy adding the olive oil, once all the olive oil has been added and you have a mayonnaise like consistency, season with salt & pepper, mix together and set aside

After simmering the noodles for about 8 minutes and all the broth has been absorbed, place a lid on the pan and turn off the heat, let it sit for 3 to 4 minutes, this will ensure all the noodles are cooked through

Once the noodles are cooked, transfer into serving dishes, top off with a dollop of the garlic aioli, and some chopped parsley, serve at once, enjoy!

The actual aioli used in the recipe is the homemade one, I did indicate in the blog about the mayo based one, 1/2 cup mayo (120 grams), 2 cloves garlic grated, 1 tsp lemon juice (5 ml), 1 tbsp olive oil (15 ml), salt & pepper, much love!
