This Spanish inspired Bruschetta with Roasted Peppers and Spanish Olives is loaded with Mediterranean flavors and super easy to make. The entire dish is made in well under 30 minutes and makes for the perfect starter to any meal, specially a paella. I used jarred roasted red bell peppers to make this recipe, just because it made the entire process a lot easier, but you can always roast your own red bell peppers. I also used a Spanish baguette (very similar to a French baguette), very important to use a good quality bread that has a crusty exterior with a soft not-to-dense inside. For the cheese I used a Manchego cheese, the perfect cheese to compliment the peppers and olives while giving the bruschetta an amazing balance in flavor and texture.
