
Creamy Cucumber Tomato Sandwich | HEALTHY & Delicious 10 Minute Recipe
This creamy cucumber tomato sandwich is where healthy meets delicious. It’s filled with flavors, made with simple heart-healthy ingredients, and all done in about 10 minutes. Serve it next to a handful of chips and a couple of ice-cold beers for a great meal.
To make this sandwich, I used an English cucumber. You can use whatever type of cucumber you like. Either way, I kept the skin on the cucumber, as it adds more flavors and nutrients. If you prefer (or if you are using a regular cucumber, as they have thicker skin), you can peel the cucumber.
What gives this sandwich that creamy goodness is Greek yogurt. I used low-fat, but you can also use full-fat, nonfat, or even a plant-based one to easily make this sandwich vegan. As for the bread, I used multigrain. But any other type of bread will work.
TIPS & TRICKS to Make this Recipe: Make sure to lightly toast the bread beforehand. That way, once you add the creamy cucumber mixture, it doesn’t break apart. You can make the creamy cucumber mixture ahead of time. It will hold for up to 3 to 4 days in the fridge in an airtight container.

Creamy Cucumber Tomato Sandwich
Ingredients
- 6 slices multi-grain sandwich bread
- 1 container low-fat plain Greek yogurt 5.3 oz / 150 grams
- 1 tbsp dijon mustard 15 grams
- 2 cloves garlic (finely grated)
- 1 tsp dried dill 1 gram
- 1 tbsp lemon juice 15 ml
- 1 cup finely chopped English cucumber 150 grams
- 1/3 cup chopped red onion 50 grams
- 2 tbsp chopped parsley 8 grams
- 1 large tomato (thinly sliced)
- sea salt & black pepper
Instructions

Add the yogurt into a large bowl, along with the dijon mustard, grated garlic, dried dill, lemon juice, and season with salt & pepper, whisk together

Add the chopped cucumber into the bowl with the yogurt sauce, along with the chopped red onion, and chopped parsley, mix together

Lightly toast the slices of sandwich bread, then add the creamy cucumber mixture over a slice of toast, top it off with some slices of tomato, season with salt & pepper, add some more of the creamy cucumber mixture to the top slice of toast, and place it over the sandwich, enjoy!
