CREAMY Cucumber Tuna Sandwich | Healthy & Delicious 10 Minute Recipe

This creamy cucumber tuna sandwich is filled with layers of flavors, made with simple everyday ingredients, and done in just 10 minutes. Serve it next to a handful of chips and a couple of ice-cold beers or even some chilled club soda for the best moment in your day.

CREAMY Cucumber Tuna Sandwich

To make the tuna salad, I used canned Spanish tuna in olive oil. You can use any type of canned tuna you like. Though the higher the quality of the tuna, the better the overall flavors. To give the salad that creamy goodness, I used low-fat plain Greek yogurt. You can also use full fat or even non-fat.

For the bread, I used multi-grain sandwich bread. You can use whatever type of bread you like. The most important thing is to make sure you lightly toast the bread. That way, once you add the rest of the ingredients, it doesn’t get mushy and break apart.

TIPS & TRICKS to Make this Recipe: You can make the tuna salad ahead of time. It will hold for up to 3 to 4 days in the fridge in an airtight container.

Ingredients

  • 2 cans tuna in olive oil 4 oz / 110 grams each
  • 1/2 cup low fat plain Greek yogurt 120 grams
  • 2 tsp dijon mustard 10 grams
  • 1/3 cup chopped red onion 50 grams
  • 1/4 cup chopped dill pickles 35 grams
  • 2 tbsp chopped chives 5 grams
  • 1 clove garlic (finely grated)
  • 2 tsp lemon juice 10 ml
  • 1/2 English cucumber (thinly sliced)
  • 6 slices multi-grain sandwich bread
  • sea salt & black pepper

Instructions

  1. Drain the cans of tuna into a fine sieve with a bowl underneath, gently flake the tuna to remove any of the excess oil, then transfer the tuna into a large bowl, along with the Greek yogurt, dijon mustard, chopped red onion, chopped dill pickles, chopped chives, grated garlic, lemon juice, and season with sea salt and a generous portion of black pepper, mix together until well mixed, add in more yogurt if the mixture is too dry

  2. Thinly slice the cucumber

  3. Lightly toast the slices of sandwich bread

  4. Add the tuna salad over the slices of toast, top off with some slices of cucumber, and another slice of toast, enjoy!
