CREAMY Mediterranean Chickpea Salad

This creamy Mediterranean chickpea salad is what healthy and delicious food is all about. It’s filled with flavors, made with simple everyday ingredients, and done in just 10 minutes with absolutely no cooking. Serve it as a side, or even as a main course, as it certainly has enough protein. Either way, it promises to fill you with so much goodness.

To make this recipe, I used jarred Spanish chickpeas. Which are the same thing as the canned ones. If you prefer to use dried chickpeas. Just soak them overnight in plenty of water, and then simmer them the following day for 1 to 2 hours or until just tender.

What gives this salad that creamy goodness without the guilt is Greek yogurt. I used low-fat, but you can also use full-fat, nonfat, or even a plant-based one to easily veganize this recipe.

Ingredients

  • 1/2 cup low fat plain Greek yogurt 125 grams
  • 1 tsp Dijon mustard 5 grams
  • 2 cloves garlic (finely grated)
  • 1/2 tsp dried oregano 0.50 grams
  • 2 tsp lemon juice 10 ml
  • 1 tbsp extra virgin olive oil 15 ml
  • 1 jar cooked chickpeas (same as canned) 25 oz / 700 grams
  • 1/3 cup diced red onion 40 grams
  • 1/2 cup diced English cucumber 75 grams
  • 1/2 cup diced red bell pepper 75 grams
  • 1/2 cup cherry tomatoes cut in half 75 grams
  • 1/3 cup sliced black olives 45 grams
  • 2 tbsp chopped chives 5 grams
  • sea salt & black pepper

Instructions

  1. Add the Greek yogurt into a large bowl, along with the Dijon mustard, grated garlic, dried oregano, and lemon juice, then season with salt & pepper and whisk together, once well mixed, slowly add in the olive oil while whisking continuously

  2. Drain the jarred chickpeas into a colander and rinse them under water, then shake off any excess water and transfer the chickpeas into the bowl with the yogurt dressing

  3. Add the diced red onion over the chickpeas, along with the diced English cucumber, diced red bell pepper, the cherry tomatoes cut in half, and the sliced black olives, then add in the chives and season everything with salt & pepper, gently mix together until well mixed

  4. Serve at room temperature or even chilled, as it will hold for up to 3 to 4 days in the fridge, enjoy!

    As I happily munch on this delicious salad, I wanted to share why I think this is so good. I love the brininess that the olives bring and the crisp texture of the fresh vegetables against the creaminess of the chickpeas is excellent. I’m almost tempted to add another 1/2 tablespoon of Dijon but I think it would be too noticeable and throw off the harmony. Personal preference, I think am going to sprinkle a few feta cheese crumbles on top. I think that the salty creamy tang would be a nice addition. I know that the recipe is 4 servings, but I am the only person in my household that will eat this so I think halving it next time would be better for me. Thank you for the delicious recipe, it’s a keeper!
