CREAMY Scrambled Eggs with Green Beans | Healthy & Delicious Recipe
These Creamy Scrambled Eggs with Green Beans are seriously good. They´re filled with simple yet delicious flavors, made with just 3 ingredients and effort-less to put together. Serve them next to a crunchy baguette for the ultimate experience.
To make this recipe I used organic cage-free eggs. But you can use whatever eggs you like. But like I always say, on recipes that are this simple, the higher the quality of the ingredients, the better the overall flavor.
The secret to this recipe is to use garlic infused olive oil. As it adds an incredible depth of flavors. Also, when you go pick your green beans at the market, make sure the have a solid green color all around with no brown spots. As that is a sign of older green beans.
TIPS & TRICKS to Make this Recipe: Important to cook the eggs on a LOW heat. Anything higher and the eggs will cook too quickly and you won´t achieve that creamy texture. Also, make sure to mix the eggs continuously so they all evenly cook.

CREAMY Scrambled Eggs with Green Beans
Ingredients
- 2 tbsp garlic infused olive oil 30 ml
- 6 eggs
- 1/2 lbs green beans 200 grams
- pinch sea salt
- dash black pepper
Instructions
-
Fill a stock pot half ways with water, season generously with sea salt and heat with a high heat
-
Meanwhile, rinse the green beans under cold water
-
Once the water comes to a boil in the stock pot, add in the green beans, once it comes back to a boil, go for 3 to 4 minutes or until the green beans are just tender, then drain into a sieve and let them sit there so the water drains and they cool off
-
Meanwhile, crack the eggs into a large bowl, season with sea salt & black pepper and whisk together until well mixed
-
Heat a large nonstick fry pan with a low heat and add in the garlic infused olive oil
-
Once the green beans are cool enough to handle, cut off the ends and then cut each one into 2 inch (5 cm) pieces, then add into the bowl with the whisked eggs and mix together
-
Add the egg mixture into the pan with the hot oil, start mixing the mixture in small circular motions, after 1 minute and the eggs have some texture, start mixing everything together continuously
-
After 3 to 4 minutes and the eggs are just cooked through and you´ve ended up with a creamy texture, remove from the heat
-
Transfer into a large serving dish and serve at once, enjoy!

06 . Feb . 2024We went to the farmers market and I had purchased green beans, we are on a trip with friends who like to cook and they had all these meals planned so I thought what could I do with the green beans and your recipe popped up. I did do one thing extra-I sprinkled shredded cheese on it. Thanks for the recipe.
