Crispy Fried Manchego Cheese | CLASSIC Spanish Tapas Recipe

This Crispy Fried Manchego Cheese, known as Queso Manchego Frito, is what Spanish comfort food is all about. We’re talking a crispy exterior with a creamy interior, easy to make, and done in just 15 minutes. Serve this dish next to some marinated olives and a couple of ice-cold beers for an amazing appetizer.

Crispy Fried Manchego Cheese

To make this recipe, I used a block of Spanish Manchego that was aged for 4 months. You can use other types of Manchego or whatever cheese you have on hand. Though I do recommend using a Spanish Manchego. As it gives this dish that lift of Spanish goodness.

Crispy Fried Manchego Cheese

To fry the cheese, I used virgin olive oil. You can use other types of oil. Such as sunflower oil, canola oil, or even avocado oil. However, virgin olive oil is what’s typically used to make this recipe. As it gives the fried cheese a lift of flavors.

TIPS & TRICKS to Make this Recipe: It took me about 2 minutes per side on medium heat to crisp up the slices of cheese. It may take you less or more. Either way, don’t over fry the slices of cheese. Otherwise, the cheese will start to melt, and the slices will lose their texture.

Ingredients

  • 1/2 cup virgin olive oil 120 ml
  • 12 oz block manchego cheese 340 grams
  • 1/2 cup all purpose flour 60 grams
  • 2 cage-free organic eggs
  • 1 cup panko breadcrumbs 110 grams
  • 1 tsp dried rosemary 1 gram
  • sea salt & black pepper
  • fresh parsley for garnish
  • strawberry jam for dipping (optional)

Instructions

  1. Heat a large fry pan with a medium heat and add in the olive oil

  2. In the meantime, cut the block of manchego cheese into slices that are 1 cm thick (a little over a 1/4 inch)

  3. Add the flour into bowl, crack the eggs into a separate bowl, season with sea salt & black pepper and whisk together, add the panko breadcrumbs into a third separate bowl, season with the rosemary and a kiss of sea salt, mix together

  4. Coat each slice of cheese, first in the flour, then into the egg wash, and finally into the breadcrumbs, making sure at each stage they are fully coated all around

  5. Add the breaded slices of cheese into the hot fry pan, in a single layer and evenly spaced out, cook in batches to not overcrowd the pan, fry for 1 to 2 minutes per side or until golden and crispy, transfer into a dish with paper towels as you finish each batch

  6. Add the slices of fried cheese into a serving dish, serve next to some strawberry jam for dipping and fresh parsley, serve at once, enjoy!
