
CRISPY Spanish Pea Fritters | Packed with Goodness & EASY to Make
These Crispy Spanish Pea Fritters, known as Buñuelos de Guisantes, have a light, crispy texture with a delicious interior, they’re easy to make and done in a little over 30 minutes. Serve them as a tapas appetizer or even as a side dish. Next to some roasted potatoes and pan-grilled fish.
To make this recipe, I used a bag of frozen peas. When boiling the peas, boil them for 2 to 3 minutes or until just tender. If you overboil them, they will get a mushy texture and lose their beautiful, vibrant green color.
I served these pea fritters next to a yogurt dipping sauce that truly elevates the fritters. Made with just Greek yogurt, dried dill, garlic, lemon juice, and olive oil. To make the sauce dairy-free, just use a plant-based yogurt.
TIPS & TRICKS to Make this Recipe: It took me about 4 minutes per side to crisp up the pea fritters. It might take you less or more. Just ensure the heat is on medium and nothing higher. Otherwise, the pea fritters will brown too quickly on the outside and not fully cook on the inside.

CRISPY Spanish Pea Fritters | Buñuelos de Guisantes
Ingredients
FOR THE PEA FRITTERS
- 1 lb bag frozen peas 455 grams
- 1/2 cup all purpose flour 60 grams
- 1 tsp baking powder 5 grams
- 1 large egg
- 1/3 cup low fat milk 90 ml
- 1 small onion (finely chopped)
- 2 cloves garlic (finely grated)
- 1/4 cup grated Manchego cheese 30 grams
- 2 tbsp chopped parsley 8 grams
- sea salt & black pepper
FOR THE YOGURT DIPPING SAUCE
- 1/2 cup plain Greek yogurt 120 grams
- 1 clove garlic (finely grated)
- 1 tsp dried dill 1.5 grams
- 2 tsp lemon juice 10 ml
- 1/2 tbsp extra virgin olive oil 8 ml
- sea salt & black pepper
EXTRAS
- 1/3 cup sunflower oil 90 ml
Instructions

Fill a stock pot half ways with water, season generously with sea salt, and heat with a high heat, once it comes to a boil, add in the frozen peas, boil for 2 to 3 minutes or until just tender, then drain into a colander and rinse under cold water

Add half of the boiled peas into a large bowl, using a potato masher or large fork, mash down on the peas until well mashed

Add the flour into a separate large bowl, along with the baking powder, mix together, then make a well in the middle, crack in the egg and whisk the egg, then add in the milk and whisk everything together until you get a creamy batter

Once you end up with a creamy batter, add in the mashed peas, along with the other boiled peas, the chopped onion, grated garlic, grated cheese, and chopped parsley, then season with sea salt & black pepper, mix together until well mixed, if your mixture is too thin, add in more flour, if it's too thick, add in more milk

Heat a large fry pan with a medium heat and add in the sunflower oil

After a couple of minutes, add in spoonfuls of batter into the hot oil, all in a single layer and evenly spaced out, cook in batches to not overcrowd the pan, fry for 3 to 4 minutes per side or until golden and crispy, transfer the fritters into a dish with paper towels as you finish each batch

To make the yogurt dipping sauce, add the Greek yogurt into a bowl, along with the grated garlic, dried dill, lemon juice, and olive oil, then season with sea salt and a generous portion of black pepper, whisk together

Add the yogurt sauce into a dish and decorate the fritters around it, enjoy!
