CRISPY White Bean Tuna Fritters | Possibly the BEST Fritters Ever
These crispy white bean tuna fritters, known as tortitas de alubias y atún, are what honest home cooking is all about. We’re talking basic pantry staples, easy to make, and all done in just 30 minutes. Serve them as a tapas appetizer or even as a main course, as they certainly have enough protein.

To make this recipe, I used canned white beans. Just to make things quicker and easier. You can also use dried white beans if you like. Just soak them in plenty of water overnight, and then simmer them the following day for 1 to 2 hours or until tender.

As for the tuna, I used canned tuna in olive oil. You can also use canned tuna in water if you prefer. For the batter, I used beer. If beer is not your thing, you can substitute it for club soda or even sparkling water.

TIPS & TRICKS to Make this Recipe: It took me about 3 minutes per side to crisp up the fritters to a golden crisp. It might take you less or more. Just ensure the heat is on medium and nothing higher. Otherwise, the fritters might brown too quickly on the outside and not fully cook on the inside.

CRISPY White Bean Tuna Fritters | Tortitas de Alubias y Atún
Ingredients
FOR THE FRITTERS
- 1/2 cup all purpose flour 60 grams
- 1/2 tsp baking powder 2 grams
- 1 large egg
- 1/3 cup beer 90 ml
- 1 can white beans (drained & rinsed) 15.5 oz / 440 grams
- 2 cans tuna in olive oil (drained) 4 oz / 110 grams each
- 1/4 cup chopped onion 40 grams
- 2 cloves garlic (roughly chopped)
- 2 tbsp chopped parsley 5 grams
- 1/2 tsp sweet smoked Spanish paprika 1.25 grams
- 1/4 tsp ground cumin 0.75 grams
- sea salt & black pepper
FOR THE MAYO AIOLI
- 1/2 cup low fat mayonnaise 120 grams
- 1 clove garlic (finely grated)
- 1 tsp hot smoked Spanish paprika 2.50 grams
- 1 tsp lemon juice 5 ml
- 1 tbsp extra virgin olive oil 15 ml
- sea salt & black pepper
EXTRAS
- 1/4 cup extra virgin olive oil 60 ml
- chopped parsley for garnish
Instructions

Add the flour and baking powder into a large bowl, whisk together, then make a well in the middle, crack in the egg and whisk the egg, then add in the beer and whisk everything together until you get a smooth batter

Add the canned beans (drained & rinsed) into the batter, using a large wooden spoon break some of the beans apart, then add in the canned tuna (drained), chopped onion, chopped garlic, chopped parsley, paprika, cumin, and season with salt & pepper, mix together until well mixed

Heat a large fry pan with a medium heat and add in the olive oil

After a couple of minutes, add in spoonfuls of the batter, you want all the fritters in a single layer and evenly spaced out, cook in batches, fry the fritters for 3 minutes per side or until golden and crispy, then transfer into a dish with paper towels

To make the mayo aioli, add the mayonnaise into a bowl, along with the grated garlic, hot smoked paprika, lemon juice, olive oil, and season with salt & pepper, whisk together

Transfer the mayo aioli into a serving dish and decorate the fritters around it, enjoy!

A great way to use tuna fish and soooo much better than most other recipes for bland tuna patties I’ve found and tried. I also liked that it included white beans as well. And they came together quickly because the recipe was not overly and needlessly complex. Great job

22 . Sep . 2025Just delicious. I was a little skeptical at first (tuna?) but I made these. I might add a little bit more of each seasoning next time but they take no time to make and came out great. Next time I’ll even make the Aioli (and they’re so good on their own!)
