Fried Cheese with Spanish Tomato Sauce | Queso Frito con Tomate

Are you ready for one of the most extraordinary tapas dishes from Spain? I present to you Fried Cheese with Spanish Tomato Sauce. This tapas dish hails from the town of Yecla in the region of Murcia, where it´s known as queso frito con tomate.


Seriously folks, this tapas dish is an absolute flavor bomb. Loaded with so many dimensions of flavors, super easy to make and comes together in just 30 minutes. Serve it next to a crusty baguette to mop up all that beautiful tomato sauce.


To make the tomato sauce, I used fresh tomatoes that I finely grated, but you can totally use canned tomato sauce instead. For the cheese, I used firm fresh goat cheese. Which you can substitute for hallumi cheese, paneer cheese or Mexican queso fresco. Basically, any cheese that has a high melting point.


TIPS & TRICKS to Make this Recipe: Cook the entire dish on a medium heat. If you go any higher, the sauce will get too thick and the cheese will burn. When you fry the cheese, make sure to fry it only one time per side. Otherside you risk the chance of the cheese falling apart.

Fried Cheese with Spanish Tomato Sauce | Queso Frito con Tomate

Ingredients

  • 1 block firm fresh goat cheese 250 grams or 8 1/2 Ounces
  • 5 tomatoes
  • 1 green bell pepper
  • 2 cloves garlic
  • 1/3 cup + 2 tablespoons extra virgin olive oil 110 ml
  • sea salt & black pepper
  • pinch white sugar
  • handful freshly chopped parsley

Instructions

  1. Finely grate 4 to 5 tomatoes, to end up with about 1 1/2 cups (300 grams) of grated tomato, thinly slice 1 green bell pepper, finely mince 2 cloves of garlic and cut 1 block of firm fresh goat cheese into thick slices that are about 1/2 inch (1.27 cm) thick

  2. Heat a fry pan with a medium heat and add in 2 tablespoons (30 ml) extra virgin olive oil, after 2 minutes add in the sliced green bell pepper and mix with the olive oil, after 4 to 5 minutes and the bell pepper is soft and lightly fried, add in the minced garlic and continue to mix, after 90 seconds add in the grated tomato and season with sea salt, black pepper and a pinch of white sugar, mix together and simmer on a medium heat

  3. Meanwhile, heat another pan with a medium heat and add in 1/3 cup (80 ml) extra virgin olive oil, after 4 minutes and the oil is hot but not smoking, add in the slices of cheese, cook for 2 1/2 to 3 minutes per side, or until they have a fried golden color, only flip the cheese one time otherwise it might fall apart, once fried on both sides remove from the pan and transfer to a dish with paper towels

  4. Grab the simmering tomato sauce and transfer into a serving dish, add the slices of fried cheese over the tomato sauce and garnish with freshly chopped parsley, serve at once, enjoy!
