Garlic Butter Beans in Tomato Sauce | Healthy & Delicious One-Pan Recipe

These Garlic Butter Beans in Tomato Sauce are packed with flavors, made with basic pantry staples and done in under 30 minutes. Serve them as a side dish next to some grilled fish or even as a main course next to a crunchy baguette. Either way, it’s the kind of food that’s going to fill you with so much goodness.

To make this recipe, I used canned butter beans. If you can’t find butter beans in your market, you can use any other canned white bean. Such as great northern or cannellini. You can also use dried beans here if you like. Just soak them overnight in plenty of water and then simmer the following day for 1 to 2 hours or until tender.

What flavors this dish are the sweet smoked paprika, hot smoked paprika, ground cumin and sherry vinegar. You can add other spices or herbs if you like. But this combination is what gives this dish that punch of Spanish goodness.

TIPS & TRICKS to Make this Recipe: You can serve this dish warm or even at room temperature. It will hold for up to 3 to 4 days in the fridge in an airtight container. When reheating, you can add in some water or broth to thin out the tomato sauce.

Garlic Butter Beans in Tomato Sauce | Judiones de la Granja con Tomate

Ingredients

  • 2 tbsp extra virgin olive oil 30 ml
  • 1 small onion
  • 8 cloves garlic
  • 1 small carrot (peeled)
  • 1 tbsp sherry vinegar 15 ml
  • 1/2 tsp sweet smoked Spanish paprika 1.25 grams
  • 1/2 tsp hot smoked Spanish paprika 1.25 grams
  • 1/2 tsp ground cumin 1.50 grams
  • 1 can tomato sauce 15 oz / 425 grams
  • 2 cans butter beans 15.5 oz / 440 grams each
  • 2 tbsp chopped parsley 8 grams
  • sea salt & black pepper
  • handful chopped chives

Instructions

  1. Drain the canned butter beans into a colander and rinse the beans under water, finely chop the onion, roughly chop the garlic and finely chop the carrot

  2. Heat a large fry pan with a medium heat and add in the olive oil

  3. After a couple of minutes add in the chopped vegetables, mix continuously, after 3 to 4 minutes and the onion is translucent, add in the sherry vinegar, sweet smoked paprika, hot smoked paprika and ground cumin, quickly mix together, then add in the canned tomato sauce, drained butter beans, the chopped parsley and season with sea salt & black pepper, gently mix together and then simmer

  4. After simmering the beans for 10 minutes, remove the pan from the heat

  5. Transfer the beans into a large serving dish and top off with chopped chives, serve warm or at room temperature, enjoy!
