Grilled Garlic Shrimp Skewers

Shrimp have always been one of my favorite shellfish, they have such an incredible texture and can really bring a huge flavor to any dish. Most people use shrimp to add more appeal to a dish, such as a seafood paella, a stir fry or even a salad, just to make the dish pop and have more flavor. All this sounds great, and it is great, but shrimp is a shellfish that can also stand on its own. Take this recipe of grilled Garlic Shrimp Skewers, we are using the all mighty shrimp and making it the star of the show, while combining it with garlic, and as we all know, shrimps best friend is garlic. This recipe is very easy to make, and uses simple ingredients, so remember to buy the highest quality fresh shrimp you can find. Garlic Shrimp Skewers

Ingredients

  • 12 Jumbo Shrimp (peeled and deveined)
  • 1 Clove of Garlic
  • 2 Tbsp Extra Virgin Spanish Olive Oil
  • 1/2 Tsp Smoked Paprika
  • Lemon
  • Fresh Parsley
  • Sea Salt
  • Wooden Skewers

Instructions

  1. Finely mince 1 clove of garlic
  2. Add the minced garlic to a mortar & pestle and pound it until it becomes a smooth paste
  3. Add 2 tablespoons of extra virgin olive oil, 1/2 teaspoon of smoked paprika and 1/2 teaspoon of sea salt to the mortar and mix everything together
  4. Using wooden skewers, add about 4 jumbo shrimp that are already peeled and deveined onto each skewer
  5. Pre-heat a grilling pan with a medium-high heat
  6. Using a grilling brush, spread the sauce in the mortar (reserving a little for later) on top of the shrimp skewers and brush the sauce all over
  7. Once the pan gets very hot, add the skewers to the pan
  8. After about 1 minute turn the skewers to cook the uncooked side and brush what is left of the sauce onto the shrimp skewers
  9. After cooking your skewers for about 2 1/2 to 3 minutes, they should be done, remove from the pan and place on a plate
  10. Garnish with some fresh parsley and some lemon wedges
  11. Enjoy!
