Greek salads have always had their fame, they are healthy, use simple ingredients and have an incredible flavor. For me, a good Greek salad is part of my weekly meal plan, especially during the summer months, when tomatoes are ripe and a refreshing salad is on my mind. However, I still enjoy Greek salads throughout the entire year, there is just something about them that calls my name. Most people top off their Greek salad with some extra virgin olive oil, which is amazing, however for me, I realized a Greek yogurt based sauce brings out the best flavor in the salad and makes the entire dish come together. This Greek salad recipe with homemade dressing is truly a keeper, it´s loaded with flavor and the toasted blanched almonds really bring a beautiful crunchy texture to the salad. Greek Salad Recipe with Homemade Dressing

Ingredients

FOR THE SALAD

  • 3 Tomatoes
  • 1/2 Purple Onion
  • 1 Small Cucumber
  • 10 Black Pitted Olives
  • 15 Blanched Almonds
  • 1 Tbsp Extra Virgin Spanish Olive Oil
  • Organic Feta Cheese
  • Sea Salt
  • Freshly Cracked Black Pepper

FOR THE DRESSING

  • 1 Cup Greek Yogurt
  • 1 Clove of Garlic
  • 1/2 Tsp Balsamic Glaze
  • 1/2 Tsp Fresh Lemon Juice
  • 1/2 Tsp Dried Dill
  • 1 Tbsp Extra Virgin Spanish Olive Oil
  • Sea Salt
  • Freshly Cracked Black Pepper

Instructions

  1. Finely mince 1 clove of garlic, add it to a mortar and pound it with a pestle until you form a paste, then add 1 cup of Greek yogurt, 1/2 teaspoon of balsamic glaze, 1/2 teaspoon of fresh lemon juice, 1/2 teaspoon of dried dill, season with sea salt and freshly cracked black pepper and mix everything together, then slowly pour in about 1 tablespoon of extra virgin Spanish olive oil while you continue to stir, once finished cover with seran wrap and add the sauce to the fridge
  2. Heat a small non-stick frying pan with a medium heat and dry roast about 15 blanched almonds between 3-4 minutes and set aside
  3. Cut 3 tomatoes into small wedges and add to a shallow bowl, finely slice 1/2 of a red onion and add on top of the tomatoes, cut a small cucumber in half vertically and de-seed each half with a spoon, then cut it into thin slices and add to the bowl with the tomatoes and onions, thinly slice about 10 black pitted olives and add to the bowl, add the toasted almonds on top, and then season with sea salt and freshly cracked black pepper
  4. Crumble some organic feta cheese on top of the salad and drizzle a kiss of extra virgin Spanish olive oil on top of the salad
  5. Decorate the sauce you made earlier on top of the salad and serve
  6. Enjoy!
