These Grilled Asparagus Wrapped in Smoked Salmon are the perfect way to enjoy the flavors of Spring. Each spear of asparagus is grilled to perfection and then wrapped with slices of smoked salmon. The combination of flavors between these two ingredients is simply sublime. Fresh asparagus are one of my favorite ways to celebrate Spring, well that and the warmer weather and longer days too 🙂 . These Grilled Asparagus Wrapped in Smoked Salmon are easy to put together and make for the perfect appetizer. With one taste, this dish will become your go-to appetizer during these beautiful Spring days.
The Perfect Garlic Yogurt Dip
When I first made these Grilled Asparagus Wrapped in Smoked Salmon, I fell in love with them instantly, however, they needed something more, so I created a garlic yogurt dip to bring the entire dish together. This Garlic Yogurt Dip is super easy to make and packs a big flavor, plus hey, who doesn´t love a good dip! and seriously, it works so amazingly well with the asparagus. Grilled Asparagus Wrapped in Smoked Salmon & Dip Recipe
Ingredients
- -1 clove garlic
- -1 cup Greek yogurt
- -1/2 tsp onion powder
- -1/2 tsp dried dill
- -1/2 tsp lemon juice
- -sea salt
- -black pepper
- -8 stalks fresh asparagus
- -extra virgin Spanish olive oil
- -fresh lemon juice
- -sea salt
- -black pepper
- -8 slices smoked salmon
Instructions

Begin by making the garlic yogurt sauce, finely mince 1 clove of garlic and add it to a mortar, using a pestle pound down on the garlic until you form a paste, then add 1 cup of Greek yogurt, 1/2 teaspoon onion powder, 1/2 teaspoon dried dill and 1/2 teaspoon fresh lemon juice, season generously with sea salt and freshly cracked black pepper and mix everything together until well combined, cover with seran wrap and add it to the fridge

Cut off between 1-2 inches from the stalk of 8 fresh asparagus, rinse them under cold water and pat them dry with paper towels, then brush them with some extra virgin Spanish olive oil, a kiss of fresh lemon juice, lightly season with sea salt and freshly cracked black pepper

Heat a grilling pan with a medium heat, once the pan get´s very hot add the asparagus, cook them between 4-5 minutes, turning them occasionally

Once you have your asparagus grilled, wrap 1 slice of smoked salmon to each stock of asparagus

Transfer the garlic yogurt sauce to a bowl and place on a dish, add the smoked salmon wrapped asparagus and garnish the dish with a couple slices of fresh lemon

Fresh asparagus are one of our favorite things about Spring, too, Albert! And any chance I have to pull the grill out is always high on my list. So grilled asparagus is an excellent choice! But then wrapping it in smoked salmon? I’ve never tried that, but I can see how it would taste amazing. And that’s before you add in that dip. You’ve got my attention now. I need to try this recipe…and soon! 🙂

A beautiful combination: salmon, asparagus and yogurt, very similar to what I have planned to cook today: baked salmon and asparagus with wild garlic quark dip and potatoes. 🙂 I am getting hungry just thinking about it!
