What makes this garlic bread so great, is the amount of fresh garlic used and the cripsy breadcrumbs on the outside. Serve this garlic bread next to a pasta or Spanish tortilla for the ultimate experience.

To make this garlic bread, I strongly recommend you use a baguette. As the texture of baguette bread is perfect for this garlic bread. I also used extra-crispy breadcrumbs. The size of these breadcrumbs are between regular and panko.

Author Albert Bevia @ Spain on a Fork

  • 1 baguette
  • 4 cage-free organic eggs
  • 4 cloves garlic
  • handful fresh parsley
  • 1 cup breadcrumbs 125 grams
  • 1/2 cup sunflower oil 120 ml
  • sea salt
  • freshly cracked black pepper

  1. Cut 1 baguette into diagonal slices that are about 1 inch (2.54 cm) thick

  2. Crack 4 eggs into a large shallow bowl, beat the eggs until well combined

  3. Finely mince 4 cloves of garlic and add to the egg mixture

  4. Finely chop a handful of fresh parsley and add about 2 tablespoons (7.60 grams) into the egg mixture

  5. Season the mixture with sea salt & black pepper, mix the egg mixture together until everything is well mixed together

  6. Add 1 cup of breadcrumbs into a large shallow bowl, season with a generous 1/4 tsp (2 grams) sea salt and mix together

  7. Heat a large fry pan with a medium heat and add in a generous 1/2 cup of sunflower oil

  8. Meanwhile coat the slices of bread, first into the egg mixture, making sure there is plenty of garlic coating the bread and then into the breadcrumbs

  9. After heating the oil for about 5 minutes, start adding the coated slices of bread into the pan, cook in batches to not over-crowd the pan, after 60 to 75 seconds flip to fry the other side, after another 60 to 75 seconds remove from the pan and transfer to a dish with paper towels, continue to cook in batches until done, serve at once, enjoy!
