My Mothers Garlic Fish with Potatoes | SERIOUSLY Good 30 Minute Recipe

We´ve made a ton of different fish recipes here on Spain on a fork. However, the one we have today truly stands out above the rest. As it´s a dish I grew up eating as a kid and still enjoy to this day. We´re talking My Mothers Garlic Fish with Potatoes. This is known in Spain as Bacalao al Ajillo con patatas.

Garlic Fish with Potatoes
This dish is basically cod that you fry in extra virgin olive oil until it´s golden fried. Then you top it off with a delicious garlic sauce and finally, serve it next some fried potatoes for a complete and flavorful meal. Serve this dish next to a bottle of Spanish rioja for the ultimate experience.

For the fish I used cod as stated above. I bought it frozen and thawed it out. But you can use any type of firm white fish that you like. Either way, make sure to pat the fish completely dry with paper towels. That way it can absorb all the flavors.

TIPS & TRICKS to Make this Recipe: I coated the cod fillets with all purpose flour before frying. This not only gives the fish a beautiful crust, but it also ensures that it stays moist and won´t fall apart when cooked. To make it gluten free, you can use corn starch instead.

My Mothers Garlic Fish with Potatoes

Ingredients

FOR THE POTATOES

  • 1/2 cup extra virgin olive oil 120 ml
  • 4 potatoes
  • pinch sea salt

FOR THE GARLIC FISH

  • 1/4 cup extra virgin olive oil 60 ml
  • 2 cod fillets 8 oz / 250 g each
  • 1/4 cup all purpose flour 30 grams
  • 1 small onion
  • 12 cloves garlic
  • 1/2 cup white wine 120 ml
  • 2 tbsp chopped parsley 8 grams
  • 1 bay leaf
  • pinch sea salt
  • dash black pepper

Instructions

  1. Heat a large fry pan with a medium heat and add 1/2 cup (120 ml) extra virgin olive oil

  2. Meanwhile, cut the potatoes (peeled) into thick french fry style cuts

  3. Add the cut potatoes into the pan with the hot olive oil, mix every 3 to 4 minutes so they all evenly fry

  4. While the potatoes are cooking, heat a separate fry pan with a medium heat, add in 1/4 cup (60 ml) extra virgin olive oil and 8 cloves of garlic (with the skins on and a slit cut on each one), mix together and then let the garlic infuse the olive oil while it heats

  5. Pat the cod fillets dry with paper towels, season with sea salt & black pepper and then coat each one in all purpose flour, making sure they´re fully coated all around

  6. After 3 to 4 minutes remove the cloves of garlic and set aside, then add the cod fillets into the pan, cook for 3 minutes per side or until golden fried, then remove and set aside

  7. Using the same pan, add in the onion finely chopped and 4 cloves garlic roughly chopped, mix continuously, after 3 to 4 minutes add in the white wine, chopped parsley, bay leaf and season with sea salt & black pepper, mix together and simmer for 3 to 4 minutes, then turn off the heat, add the cod fillets back into the pan, coat them in the sauce and place a lid on the pan

  8. Once the potatoes are golden fried, about 20 to 25 minutes, remove them from the fry pan and season with sea salt

  9. Transfer the fried potatoes into serving dishes, then add the cod fillets and drizzle with the garlic sauce, garnish with the fried cloves of garlic and some fresh parsley, enjoy!
