Pan Seared Cod with a White Wine Lemon Sauce

Ingredients

  • 2 Fillets of Fresh Cod
  • 1 Clove of Garlic
  • 1/2 Small Onion
  • 3 Tbsp Extra Virgin Spanish Olive Oil
  • 1/2 Cup Dry White Wine
  • 1 Lemon
  • 1/2 Tsp Dryed Thyme
  • 2 Tbsp Fresh Parsley
  • Sea Salt
  • Freshly Cracked Black Pepper

Instructions

  1. Finely mince 1 clove of garlic and finely dice 1/2 of a small onion
  2. Heat a non-stick frying pan with a medium heat and add 2 tablespoons of extra virgin Spanish olive oil to the pan
  3. Once the oil get's hot, add 2 fillets of fresh cod to the pan, skin side down, after cooking for about 5 minutes, season the top of each fillet with sea salt and freshly cracked black pepper and flip them around, cook for about 1 minute and then remove the fillets from the pan and set aside
  4. Using the same pan with the same heat, add the diced onions to the pan and mix with the oil, after cooking the onions for about 2-3 minutes add the minced garlic, mix and then add 1/2 cup of white wine and the juice of 1 lemon, then add 1/2 teaspoon of dried thyme, 1 tablespoon of fresh parsley, mix everything together and turn up the heat to a medium-high
  5. Once the sauce has reduced in half (about 5 minutes of cooking), turn off the fire and add 1 tablespoon of extra virgin Spanish olive oil to the pan, a pinch of fresh parsley, and then season the sauce with sea salt and freshly cracked black pepper and mix everything together
  6. Add the cooked cod fillets to a clean dish, drizzle the sauce over each fillet and garnish with some fresh lemon slices
  7. Enjoy!
