Patatas Aioli (not to be confused with Patatas Bravas), are one of Spain´s most popular tapas. These boiled potatoes with homemade aioli use the most minimum of ingredients, yet have an incredible flavor. Patatas Aioli are usually consumed cold or at room temperature, and mostly eaten as an appetizer (you could serve them as a side dish with some grilled fish as the main course). Easy Recipe for Patatas Aioli

Prep Time 5 minutes
Cook Time 35 minutes
Total Time 40 minutes

Ingredients

  • 2 Yukon Gold Potatoes
  • 1/3 Cup Homemade Aioli
  • Fresh Parsley
  • Sea Salt

Instructions

  1. Using a medium sized sauce pan, fill it with enough water to completely cover the potatoes
  2. Turn the burner on to a medium-high heat
  3. Once the water begins to boil add a pinch of sea salt to the water and add the two potatoes
  4. Cover the sauce pan and lower the heat to a low-medium heat and cook for about 20-25 minutes.
  5. Remove the potatoes from the sauce pan, pat dry and let them cool to room temperature
  6. Cut potatoes in half and remove the skin
  7. Cut each potato into 4 quarters
  8. You should get about 6 cubes of potatoes from each quarter
  9. Add the cut potatoes into a medium sized bowl
  10. Season the potatoes with sea salt
  11. Add the 1/3 cup aioli to the bowl and toss everything together
  12. Once all the potatoes are coated in aioli transfer to a plate
  13. Sprinkle with some freshly chopped parsley
  14. Enjoy!
