Refreshing Spanish Tomato Salad | The Ultimate Summer Salad Recipe

This Refreshing Spanish Tomato Salad, known in Spain as ¨Ensalada de Tomate¨, is packed with flavors, made with simple ingredients and comes together in just 10 minutes. Truly, the ultimate summer salad, yet it´s bold enough to enjoy all year round.

You can serve this salad as a tapas appetizer or even as a side dish, next to a Spanish omelette. Either way, the fresh flavors and the simplicity of this salad, promise to blow you away.

To make this salad, I used tomatoes off the vine, which are also known as better boy tomatoes. These are the tomatoes that are typically used to make this salad. However, you can use any tomatoes you like. I also used sherry vinegar to make the dressing, but once again, you can use any vinegar you like.

TIPS & TRICKS to Make this Recipe: The secret to this recipe, is to cut the slices of tomato, season them with salt & pepper and let them rest for 5 minutes in a single layer. This will help remove some of the water in the slices of tomato. That way when you add the dressing, the tomatoes can really absorb all the flavors.

Refreshing Spanish Tomato Salad

Ingredients

  • 2 large tomatoes
  • 2 tbsp extra virgin olive oil 30 ml
  • 1/2 tbsp sherry vinegar 8 ml
  • 1 clove garlic
  • 1 tsp dried oregano 1 grams
  • handful finely chopped parsley
  • sea salt & black pepper

Instructions

  1. Thinly slice 2 tomatoes (washed & patted dry) into slices that are 1/8 inch (.3175 cm) thick, then place them in a single layer, season with sea salt & black pepper just on one side and let them sit for 5 minutes

  2. Meanwhile make the dressing, add 2 tbsp extra virgin olive oil into a small bowl, along with 1/2 tbsp sherry vinegar, finely grate 1 clove of garlic, add in 1 tsp dried oregano and lightly season with sea salt & black pepper, whisk together until well mixed

  3. After 5 minutes, transfer the slices of tomato into a serving dish, making sure to shake off any excess water from them, drizzle the dressing over the tomatoes and sprinkle with finely chopped parsley, enjoy!
