The EASIEST Zucchini Recipe with the BEST Flavor | Quick Recipe
We have made a ton of zucchini recipes here on Spain on a Fork, however, these Sautéed Zucchini with Paprika & Garlic have to be the EASIEST Zucchini Recipe with the BEST Flavor we´ve ever done. We´re talking basic ingredients, effortless to put together and a bombshell of flavors.
The secret to this recipe is to salt the slices of zucchini and then let them rest for 10 minutes. This will extract the water out of the zucchini. That way when you cook it, it keeps its firm texture and will not get mushy.
I flavored the slices of zucchini with just sea salt, black pepper, garlic powder and sweet smoked Spanish paprika. You can add other spices & herbs if you like. But this simple combination gives the zucchini the best flavor ever.
TIPS & TRICKS to Make this Recipe: I sauteed the slices of zucchini for 2 minutes per side on a medium heat. This is enough time to lightly brown the zucchini and for the zucchini to be fully cooked through. However, every pan and stove top heats differently. It might take you 1 1/2 minutes per side or even up to 3 minutes per side.

Sautéed Zucchini with Paprika & Garlic
Ingredients
- 2 tbsp extra virgin olive oil 35 ml
- 2 zucchini
- dash black pepper
- dash garlic powder
- dash sweet smoked Spanish paprika
- pinch sea salt
- dash black pepper
Instructions

Cut each zucchini (washed & patted dry) into diagonal slices that are 1/4 inch (.635 cm) thick, then place them all in a single layer over a wire rack with paper towels underneath, season with sea salt on both sides and let them rest for 10 minutes

After 10 minutes, pat the slices of zucchini completely dry

Heat a large fry pan with a medium heat and add in a generous 2 tbsp extra virgin olive oil

Meanwhile, season the slices of zucchini with black pepper, garlic powder and sweet smoked Spanish paprika, just on one side

Add the slices of zucchini seasoned side down into the hot pan with the olive oil, all in a single layer, cook in batches, go for 2 minutes per side, as you finish each batch transfer the slices of zucchini into a wire rack, once again in a single layer

Serve the slices of zucchini warm, at room temperature or even chilled, enjoy!
