Spanish Beans with Tomatoes and Onions

These Spanish Beans with Tomatoes and Onions are the perfect dish to celebrate the fall season, loaded with layers of flavors, easy and affordable to make and done in 30 minutes. I like to serve these beans as a tapas appetizer next to a crusty baguette, but you can also pour this over white rice for a complete meal.

The beans I used in this recipe are lima beans, also known as butter beans, very popular here in Spain. The way they sell them here in Spain is in bags already cooked and frozen, if you can´t find them like that in your area, you can use jarred lima beans or uncooked lima beans, just cook them by the package directions and you´re ready to go.

– The Secret Ingredients to these Spanish Beans –

Like I stated before, these Spanish Beans with Tomatoes and Onions are very simple to make, so what makes this dish so special? Well, it´s all in the spices. I used a combination of Kiva sweet smoked paprika and Kiva hot smoked paprika, the combination of these two paprikas brings a sweet and smoky flavor along with a kick to this dish.

Spanish Beans with Tomatoes and Onions

Ingredients

  • -2 tbsp extra virgin Spanish olive oil
  • -4 cloves garlic
  • -1 onion
  • -1/2 green bell pepper
  • -2 cups cooked lima beans
  • -1/4 tsp KIVA sweet smoked paprika
  • -1/4 tsp KIVA hot smoked paprika
  • -1/2 tsp cumin powder
  • -1 can diced tomatoes
  • -sea salt
  • -black pepper
  • -fresh chives

Instructions

  1. Finely dice 1/2 of a green bell pepper, thinly slice 4 cloves of garlic, finely dice 1 onion and reserve 2 cups of cooked lima beans
  2. Heat a non-stick frying pan with a medium heat and add 2 tablespoons of extra virgin Spanish olive oil, after 2 minutes add the sliced garlic and diced onions and mix with the oil, after 3 minutes add the diced green bell pepper and mix with the garlic and onions, after 4 minutes add the 2 cups of cooked lima beans, season with a 1/4 teaspoon of hot smoked paprika, a 1/4 teaspoon of sweet smoked paprika, a 1/2 teaspoon of cumin powder, a pinch of sea salt and some freshly cracked black pepper, mix everything together until well combined
  3. Next add 1 can of diced tomatoes, season again with sea salt and freshly cracked black pepper, lower the fire to a LOW heat and mix together, let it simmer for 4 to 5 minutes, then remove from the heat and garnish with freshly chopped chives, enjoy!
