Canned Sardines with Vegetables | EASY & DELICIOUS Recipe from Spain
These Canned Sardines with Vegetables, known in Spain as Sardinas en Conserva con Verduras, is what simple and delicious food is all about. We´re talking a ton of great flavors, effort-less to put together and all done in under 30 minutes.
Serve this dish as a tapas appetizer or even as a main course. It works great next to some Garlic Roasted Potatoes and a bottle of Spanish wine. Either way, make sure to serve it next to a crunchy baguette, to mop up all that goodness.
What really flavors the vegetables is the sweet smoked Spanish paprika. Adding the perfect balance of smokiness and a hint of sweetness. You can also add in a little chili powder to the vegetables to give them a spicy kick.
TIPS & TRICKS to Make this Recipe: You can serve this dish warm, at room temperature or even chilled. It will hold in the fridge for up to 3 to 4 days in an air-tight container for future use.

Spanish Canned Sardines with Vegetables
Ingredients
- 3 tbsp extra virgin olive oil 45 ml
- 1 onion
- 4 cloves garlic
- 1 green bell pepper
- 4 tomatoes
- 1 tsp sweet smoked Spanish paprika
- 10 black pitted olives
- 2 cans sardines in olive oil 4.2 oz / 120 grams each
- pinch sea salt
- dash black pepper
- handful fresh parsley
Instructions

Thinly slice the onion, roughly chop the garlic, thinly slice the bell pepper and finely grate the tomatoes

Heat a large fry pan with a medium heat and add in the olive oil

After a couple of minutes add in the chopped vegetables, except for the grated tomato, mix every 30 seconds so everything evenly sautees, after 6 to 7 minutes and vegetables are lightly sauteed, add in the paprika, quickly mix together, then add in the grated tomatoes, the black olives (thinly sliced) and season with sea salt & black pepper, mix together and then simmer without mixing

Once the grated tomatoes have slightly thickened, about 5 to 6 minutes, remove the pan from the heat, transfer into a large serving dish

Crack open the cans of sardines, gently remove the sardines and add over the vegetables, all in a single layer, give each one a gentle flip so they´re fully coated in the mixture, sprinkle with chopped fresh parsley, enjoy!

After you’ve made this a few times according to to Alberto’s excellent instructions, you can start thinking of this as more of a technique than a recipe. I add a red bell pepper because I think that the green one is lonely all by itself. I’ve substituted canned tomato sauce for the grated tomatoes in one version and in another version I made it with a pint of whole cherry tomatoes (gently smash them after about 7 minutes and add a few extra minutes to the simmer time at the end). I make a batch of the vegetables and portion it out and refrigerate it. When future me wants dinner, I gently reheat the vegetables and marry them to the sardines.

06 . Apr . 2024My family is trying to consume more canned sardines, because they are healthy, economical and sustainable. But we were not that excited about them, until we tried this recipe! This is delicious! I used canned tomatoes instead of fresh and green olives instead of black. So tasty, fast and easy. We enjoyed this with a loaf of crusty sourdough bread. Next time I’ll try it with your recipe for roasted potatoes. Thank you!
