Spanish Cheese Fritters | ADDICTIVELY Delicious & Easy to Make
These Spanish Cheese Fritters, known as Tortillitas de Queso Manchego, are what comfort food is all about. We’re talking a ton of great flavors, super easy to make, and all done in just 30 minutes. Serve them as a tapas appetizer or even as a side dish, next to some roasted potatoes and grilled fish.
To make this recipe, I used a Spanish Manchego cheese that was aged for 4 to 6 months. But you can use whatever Manchego you like or whatever cheese you have on hand. Some great substitutes for Manchego are: Asiago, Gouda, and White Cheddar.
I served these fritters next to a very simple, spicy mayo aioli. Made with just mayonnaise, garlic, hot smoked paprika, lemon juice, and olive oil. If you want to skip the heat, just swap the hot smoked paprika for sweet smoked paprika.
TIPS & TRICKS to Make this Recipe: You can make batter ahead of time. It will hold for up to 3 to 4 days in the fridge and up to 3 months in the freezer in an airtight container.

Spanish Cheese Fritters | Tortillitas de Queso Manchego
Ingredients
FOR THE CHEESE FRITTERS
- 1/2 cup all purpose flour 60 grams
- 1 large egg
- 1/2 cup beer 120 ml
- 1 shallot (finely chopped)
- 2 cloves garlic (finely grated)
- 2 tbsp chopped parsley 8 grams
- 1 tsp dried rosemary 1 gram
- 1/2 tsp dried thyme .50 grams
- 2 cups shredded Manchego cheese 240 grams
- sea salt & black pepper
FOR THE SPICY MAYO AIOLI
- 1/2 cup low fat mayonnaise 120 grams
- 2 cloves garlic (finely grated)
- 1 tsp hot smoked Spanish paprika 2.50 grams
- 1 tsp lemon juice 5 ml
- 1 tbsp extra virgin olive oil 15 ml
- sea salt & black pepper
EXTRAS
- 1/4 cup extra virgin olive oil 60 ml
Instructions

Add the flour into a large bowl and make a well in the middle, crack in the egg and whisk it, then add in the beer and whisk everything together until you get a creamy batter

Once you end up with a creamy batter, add in the shallot, garlic, parsley, rosemary, thyme and season with sea salt & black pepper, mix together, then add in the shredded cheese and mix together until well mixed

Heat a large fry pan with a medium heat and add in the olive oil

After a couple of minutes start adding in spoonfuls of the batter, making sure they're all in a single layer and evenly spaced out, cook in batches to not over crowd the pan, fry for 3 to 4 minutes per side or until golden fried, then transfer into a dish with paper towels

To make the spicy mayo aioli, add the mayonnaise into a bowl, along with the garlic, hot smoked paprika, lemon juice and olive oil, then season with sea salt & black pepper and whisk together until you get a creamy sauce

Transfer the mayo aioli into a serving dish and decorate the fritters around it, serve warm or at room temperature, enjoy!
