Spanish Chickpea Noodle Soup | Heartwarming 30 Minute Recipe
This Spanish chickpea noodle soup, known as sopa de garbanzos con fideos, is the perfect dish for any time of the year. But its extra special during the cooler weather, as it promises to warm your soul. Either way, its packed with flavors, easy to make, and done in a little over 30 minutes.

To make this recipe, I used jarred chickpeas, which are the same thing as the canned ones. If you prefer to use dried, just soak them in plenty of water overnight. Then simmer them the following day for 1 to 2 hours or until they are just tender.

As for the noodles, I used Spanish fideos, which are basically fideo-cut spaghetti. If you can’t find these in your area, you can just use regular spaghetti and break it into small pieces. In any case, the most important part is to check the package instructions. That way, you cook your pasta al dente, and you don’t end up with mushy pasta noodles.

TIPS & TRICKS to Make this Recipe: This soup will hold for up to 3 to 4 days in the fridge and freeze for up to 3 months in an airtight container. Just add in some broth when reheating if it looks too thick.

Spanish Chickpea Noodle Soup | Sopa de Garbanzos con Fideos
Ingredients
- 3 tbsp extra virgin olive oil 45 ml
- 2 slices baguette 1 inch / 2.50 cm thick each
- 4 cloves garlic
- 2 tbsp chopped parsley 5 grams
- 1 large yellow onion (finely chopped)
- 1 tbsp sherry vinegar 15 ml
- 1 tsp sweet smoked Spanish paprika 2.50 grams
- 1/2 tsp ground cumin 1.50 grams
- 2 tomatoes (finely grated)
- 1 jar cooked chickpeas (same as canned) 25 oz / 700 grams
- 6 cups vegetable broth 1.5 liters
- 4.5 oz Spanish fideos (fideo cut spaghetti noodles) 110 grams
- sea salt & black pepper
- chopped parsley for garnish
Instructions
-
Heat a stockpot with a medium heat and add in the olive oil
-
After a couple of minutes, add in the slices of baguette and the cloves of garlic, fry for 3 to 4 minutes or until lightly golden fried all around, then remove from the stockpot and transfer into a mortar, set aside
-
Using the same pan with the same heat, add in the chopped onion, and mix continuously
-
After 4 minutes and the onion is lightly sautéed, add in the sherry vinegar, paprika, and cumin, quickly mix together, then add in the grated tomatoes, and season with salt & pepper, mix together, and then simmer for a couple of minutes
-
Once the grated tomatoes have slightly thickened, about 3 minutes, add in the jarred chickpeas (drained and rinsed) and the vegetable broth, raise to a high heat, and give it a gentle mix
-
In the meantime, move back to the mortar with the slices of fried baguette and garlic, add in the chopped parsley and a pinch of salt, using a pestle, pound down on the ingredients until they're well mashed, you can also use a food processor, hand blender, or NutriBullet
-
Once the broth comes to a boil, add in the bread and garlic mixture and the pasta noodles (fideos), and mix together, then mix every 2 to 3 minutes so all the noodles evenly cook and they don't stick together
-
When the pasta noodles are cooked al dente (check package instructions), remove the stockpot from the heat and transfer into shallow bowls, top off with chopped parsley, and serve at once, enjoy!

My grandparents were both from Spain, and they made a wonderful soup that had some similarities to this one.….however, I see you use cumin not just in this dish, but in other recipes. None of the recipes from any of my Spanish native relatives use cumin. Does this have something to do with the area of Spain they were from?
Cumin is typically used only in the south of Spain, other parts do not use it, Much love
