Spanish Chickpeas with Chorizo | One of Spain’s Most Iconic Recipes
These Spanish chickpeas with chorizo, known as garbanzos con chorizo, are one of Spain’s most iconic homemade dishes. It’s packed with flavors, easy to make, and done in around 30 minutes. Serve it next to a garden salad, crunchy baguette, and a bottle of Spanish wine for a taste of Spain.

To make this recipe, I used jarred Spanish chickpeas, which are the same thing as the canned ones. If you prefer dried chickpeas, just soak them in plenty of water overnight, and then simmer them the following day for 1 to 2 hours or until just tender. Then proceed with the recipe.

As for the chorizo, I used cured Spanish chorizo. You can use any type of chorizo you like. Just make sure it’s firm. That way, once you cook it, it doesn’t break apart and lose its shape. As for the liquid, I used chicken broth, but you can also use vegetable broth or even beef broth.

TIPS & TRICKS to Make this Recipe: To make the thickener, I used a mortar & pestle. If you don’t have one, you can also use a food processor, hand blender, or even a NutriBullet.

Spanish Chickpeas with Chorizo | Garbanzos con Chorizo
Ingredients
- 3 tbsp extra virgin olive oil 45 ml
- 2 slices baguette 1 inch / 2.50 cm thick each
- 4 cloves garlic (whole and skins removed)
- 2 tbsp chopped parsley 5 grams
- 3.5 oz cured Spanish chorizo (cut into 1/4 inch / 0.625 cm rounds) 100 grams
- 1 medium yellow onion (finely chopped)
- 6 cloves garlic (roughly chopped)
- 1 tbsp sherry vinegar 15 ml
- 1 tsp sweet smoked Spanish paprika 2.50 grams
- 2 tomatoes (finely grated)
- 1 jar cooked chickpeas (same as canned) 25 oz / 700 grams
- 2 cups chicken broth 480 ml
- 2 bay leaves
- sea salt & black pepper
- chopped parsley for garnish
Instructions

Heat a large fry pan with a medium heat and add in the olive oil

After a couple of minutes, add in the slices of baguette and 4 whole cloves of garlic (peeled), and fry for 3 to 4 minutes or until lightly golden fried all around, then remove and set aside

Using the same pan with the same heat, add in the sliced chorizo, mix together, and sauté for 1 to 2 minutes or until lightly sautéed, then remove from the pan and set aside

Once again, using the same pan with the same heat, add in the chopped onion and chopped garlic, mix continuously, after 4 minutes and the ingredients are lightly sautéed, add in the sherry vinegar and paprika, mix together, then add in the grated tomatoes, and season with salt & pepper, mix together, and then simmer

After 3 minutes and the grated tomatoes have slightly thickened, add in the jarred chickpeas (drained and rinsed), chicken broth, and the bay leaves, raise to a high heat, and mix together

In the meantime, add the slices of fried baguette and cloves of garlic into a mortar, along with the chopped parsley and a pinch of salt, using a pestle, pound down on the ingredients until well mashed

Once the broth comes to a boil, add in the bread and garlic mixture, mix together until well mixed, then place a lid on the pan and lower to a low heat, simmer for 5 to 10 minutes, then add in the sauteed chorizo, and mix together until well mixed

Transfer into shallow bowls and top off with chopped parsley, enjoy!
