This Spanish Cod with White Wine Saffron Sauce is truly an incredible dish, it´s easy to make, uses simple ingredients and done in under 30 minutes. With everyone´s busy schedule, this is the perfect dish for a busy weeknight or for a weekend lunch. Folk´s, it doesn´t get any easier to cook cod than this, and the combination of flavors in this dish are absolutely mind-blowing. Serve it next to a simple salad and some roasted baby potatoes for a complete meal.

The secret to this Spanish cod is the white wine saffron sauce, it really elevates this dish to a restaurant quality dish. The saffron I used in this recipe was sent to me by Golden Saffron, honestly some of the best saffron threads I have ever tasted in my life….Whatever you do, don´t use imitation saffron to make this sauce, it will not work and will heavily lack in flavor. Spanish Cod with White Wine Saffron Sauce
Ingredients
- -1 14oz cod fillet 400 grams
- -2 tbsp extra virgin Spanish olive oil
- -1/2 small onion
- -1 clove garlic
- -2 tbsp diced red bell pepper
- -2 tbsp chopped scallions
- -1/2 tsp golden saffron threads
- -1/2 cup white wine
- -sea salt
- -black pepper
- -fresh chives
Instructions

Finely mince 1 clove of garlic, finely dice 1/2 onion and reserve 2 tbsp, finely chop a 1/4 piece of a red bell pepper and reserve 2 tbsp, roughly chop 2 tbsp of scallions, cut a 14 ounce (400 grams) fillet of cod into 3 or 4 evenly sized pieces and season them with sea salt and freshly cracked black pepper

Heat a nonstick frying pan with a medium-high heat and add 2 tablespoons of extra virgin olive oil, about 1 minute later add the 2 tbsp of diced onions and the 2 tbsp of diced bell peppers and mix with the oil, after cooking for 3 minutes add the minced garlic and the 2 tbsp of chopped scallions, mix with the onions and bell peppers, 30 seconds later add 1/2 tsp of saffron threads and season with sea salt and freshly cracked black pepper, after mixing it all together add 1/2 cup of white wine and give it a gentle mix

Once the wine comes to a boil add the cod fillets into the pan and place a lid on the pan, 4 minutes later remove the lid and flip the cod fillets and place the lid back on the pan, after another 4 minutes remove the pan from the heat, add the cod fillets to a dish and spoon the white wine saffron sauce over the fillets, garnish with fresh chives, enjoy!

I love fish and am always looking for new ways to serve it. At first glance I wasn’t sure how you would make this dish as it certainly does look restaurant quality but the recipe is so simple! I’ll definitely be giving it a go.
