Spanish Deluxe Potatoes | The Most FLAVORFUL Potatoes Ever

These Spanish Deluxe Potatoes are the perfect side dish for any meal. They have a melt-in-your-mouth texture, made with simple everyday staples and it´s all done in just 40 minutes. I served them next to a yummy garlic sauce (recipe below), which takes these taters to the next-level.

What really flavors these potato wedges is the spice mix. Made with garlic powder, onion powder, sweet smoked Spanish paprika, dried oregano, dried parsley and black pepper. You can mix it up and use different spices & herbs if you like, but this combo works beautifully.

To make this dish you want to use potatoes that are more waxy than starchy. As this is what gives them that melt-in-your-mouth texture. I used new potatoes, but you can also use yukon gold, golden delight or even red potatoes.

TIPS & TRICKS to Make this Recipe: It took me 30 minutes to perfectly bake the potato wedges. But every oven heats differently. So start checking at the 25 minute mark. To bake the potato wedges I used the bake + broil option (bottom + top heat). If your oven doesn´t do both functions at the same time, just flip the wedges half way through, so they evenly bake.

Spanish Deluxe Potatoes | Patatas Deluxe

Ingredients

  • 2 1/4 lbs waxy potatoes 1 kilogram
  • 3 tbsp extra virgin olive oil 45 ml
  • 1 tsp garlic powder 1.58 grams
  • 1 tsp onion powder 2.33 grams
  • 1 tsp sweet smoked Spanish paprika 2.30 grams
  • 1 tsp dried oregano 1 grams
  • 1 tsp dried parsley .54 grams
  • 1/4 tsp freshly cracked black pepper .60 grams
  • pinch sea salt

FOR THE GARLIC SAUCE

  • 1/2 cup mayonnaise 125 grams
  • 1 clove garlic
  • 1 tsp lemon juice 5 ml
  • 1 tbsp extra virgin olive oil 15 ml
  • pinch sea salt
  • dash black pepper

Instructions

  1. Add 1 tsp garlic powder into a large bowl, along with 1 tsp onion powder, 1 tsp sweet smoked Spanish paprika, 1 tsp dried oregano, 1 tsp dried parsley and 1/4 tsp freshly cracked black pepper, mix together, then add in 3 tbsp extra virgin olive oil, mix together and set aside

  2. Wash & pat dry the potatoes, then cut each one into wedges, I like to cut each potato in half lengthwise, then lay the potato cut side down and cut the wedges, 8 wedges per potato

  3. Add the potato wedges into the spice mix, season with sea salt and mix together until each potato wedge is well coated

  4. Line a baking tray with parchment paper, add the coated potato wedges and evenly spread them around, making sure they´re all in a single layer

  5. Add the potatoes into a preheated oven, bake + broil option (bottom + top heat) 200 C / 390 F

  6. Meanwhile make the garlic sauce, add 1/2 cup mayonnaise into a large bowl, finely grate in 1 clove of garlic, 1 tsp lemon juice and 1 tbsp extra virgin olive oil, season with sea salt & black pepper, whisk together until well mixed

  7. Once the potato wedges are fully cooked through, between 30 to 35 minutes, remove from the oven, transfer the potato wedges into a dish, serve next to the garlic sauce, enjoy!
