Spanish Onion Tortilla | Possibly the BEST-TASTING Spanish Omelette

The Spanish tortilla, also known as a Spanish Omelette. Truly, one of the best gifts to the food world from the Spanish kitchen. In this post, I will show you how to make a Spanish Onion Tortilla. In my opinion, this is possibly the BEST-TASTING Spanish tortilla.


This onion tortilla is loaded with flavors, it´s super easy to make and comes together in about 35 minutes. You can serve it for dinner next to a salad or even for breakfast. Either way you go, the flavors will blow you away.


The secret to this recipe, is to use the highest quality ingredients. Like cage-free organic eggs and a great olive oil. With recipes that use such minimal ingredients, it’s important to use the best ingredients.


TIPS & TRICKS to Make this Recipe: To caramelize the onions, make sure to be on a medium to medium-high heat. Otherwise, it will take much longer to caramelize them. Also, so important to use a nonstick fry pan. That way the eggs don´t stick and flipping the tortilla will be a breeze. In my pan with my stovetop, it took 4 minutes per side to cook the tortilla. But every pan and stove top heats differently. So keep an eye on it.

Spanish Onion Tortilla | Possibly the BEST-TASTING Spanish Omelette

Ingredients

  • 8 cage-free organic eggs
  • 4 large brown onions 1 kilo / 2 lbs
  • 6 tbsp extra virgin olive oil 90 ml
  • 1 tsp white sugar 4 grams
  • 1/2 tsp dried thyme .45 grams
  • 1/2 tsp dried parsley .27 grams
  • pinch sea salt
  • dash black pepper

Instructions

  1. Crack 8 eggs into a large bowl, season with sea salt & black pepper, whisk together until well combined

  2. Thinly slice 4 large onions

  3. Heat a large deep pan with a medium to medium-high heat and add in 1/4 cup (60ml) extra virgin olive oil, after 1 minute add in the sliced onion, mix with the olive oil, after 15 minutes and the onions are translucent and developing a light golden color, add in 1 tsp white sugar, continue to mix, about 8 to 10 minutes later and the onions are caramelized, season with 1/2 tsp dried thyme, 1/2 tsp dried parsley, a pinch of sea salt and black pepper, mix together and remove from the stove top

  4. Heat a large nonstick pan with a low-medium heat and add in 2 tbsp (30 ml) extra virgin olive oil

  5. Meanwhile, add the caramelized onions into the bowl with the eggs and mix together until well combined

  6. After heating the pan for 2 to 3 minutes add in the egg & onion mixture, give it a light mix so everything is evenly distributed, after 2 minutes run a spatula through the outer edges to ensure the eggs are not sticking to the pan

  7. About 4 minutes after adding the egg mixture, it´s time to flip the tortilla, place a plate that is just a bit smaller than the pan over the pan, place your hand on it, with your other hand flip the pan into the dish with one swift move, slide the tortilla back into the pan, using the back of a spatula compact the tortilla from the outer edges into the center, this helps create that classic rounded edge, after a total cooking time of 8 minutes (4 minutes per side), the tortilla should be perfectly cooked, remove from the heat and slide into a serving dish, enjoy!

    Thank you Albert! I was not able to get the onions to get that wonderful caramelized color like in your video! Put in 5 grams sugar (brown). Too little? Wrong kind? Turned out great either way, wonderful recipe.
