The ONE Asparagus Dish I Would Eat EVERYDAY | Quick & Easy Recipe
These Spanish Paprika & Garlic Asparagus are so good, I could seriously eat them everyday. They´re packed with flavors, above & beyond easy to make and done in under 30 minutes. Serve them as a tapas appetizer or even as a side dish, next to Spanish salmon and roasted potatoes.
This dish hails from the region of Andalucía in southern Spain, but more specifically from the beautiful province of Jaén, where it´s known as Espárragos Trigueros con Pimentón.
What really flavors this dish is the flavor-base that is added into the asparagus. Made with garlic, sweet smoked Spanish paprika, ground cumin, parsley and sherry vinegar. Of course, you can use other vinegars here, such as red wine vinegar or even apple cider vinegar.
TIPS & TRICKS to Make this Recipe: The secret here is to not over-cook the asparagus. Otherwise they gut mushy. Once they are lightly sauteed and you add in the flavor base and liquid, simmer for 5 minutes tops. This will ensure they are fully cooked through but without getting mushy.
