HEALTHY Pinto Bean Salad to Make You Feel Like a Million Bucks
This Spanish Pinto Bean Salad, known as Ensalada de Judias Pintas, is what simple and delicious food is all about. We´re talking a ton of great textures & flavors, made with heart-healthy ingredients and the best part, all done in just 10 minutes.
Serve this salad as a starter or even as a side dish, next to some grilled fish. Either way, you can enjoy this salad at room temperature or even add into the fridge and serve chilled. It will hold for up to 4 to 5 days in an air-tight container.
What really flavors this salad is the Garlic Infused olive oil and the sherry vinegar. Of course you can use other types of oil. However, by using garlic infused, it gives the salad a beautiful lift of garlic goodness, but without being over-powering.
TIPS & TRICKS to Make this Recipe: I used jarred pinto beans, which is the same thing as the canned ones. You can also use dried beans here. Just soak them overnight in plenty of water and then simmer the following day for 1 to 2 hours or until tender.

Spanish Pinto Bean Salad
Ingredients
- 1 jar pinto beans (same as canned) 20 oz / 560 grams
- 1 carrot
- 1 red bell pepper
- 1 spring onion
- 3 tbsp garlic infused olive oil 45 ml
- 1 tbsp sherry vinegar 15 ml
- pinch sea salt
- dash black pepper
Instructions

Drain the pinto beans into a fine sieve, rinse under cold water, then shake off any excess water and transfer into a large bowl

Finely chop the carrot (peeled), finely chop the red bell pepper, finely chop the bulb from the spring onion and finely chop a handful of the leaves from the spring onion, add the ingredients into the bowl with the pinto beans

Add in the garlic infused oil, sherry vinegar and season with sea salt & black pepper

Gently mix together, serve chilled or at room temperature, enjoy!
