Got Canned White Beans? Make these Spanish-Style White Bean Fritters
These Spanish-Style White Bean Fritters, known as Tortillitas de Alubias Blancas, are possibly the best fritters we’ve ever made here in Spain on a Fork. They’re packed with flavors, made with simple heart-healthy ingredients and done in just 30 minutes.
For this recipe, I used a can of white beans. Just to make things quicker and easier. If you prefer to use dried beans, just soak them in plenty of water overnight and then simmer the following day for 1 to 2 hours or until tender.
I served these fritters next to a spicy mayo aioli, which truly complements the fritters. Made with just mayonnaise, garlic, hot smoked paprika, lemon juice and olive oil. If you don’t have hot smoked paprika, you can substitute for chili powder.
TIPS & TRICKS to Make this Recipe: You can serve these fritters warm or at room temperature. Also, you can make the fritter batter ahead of time and add it to the fridge. It will hold for up to 3 to 4 days.

Spanish-Style White Bean Fritters
Ingredients
- 1/4 cup extra virgin olive oil 60 ml
- 1/2 cup all purpose flour 60 grams
- 1 large egg
- 1/3 cup club soda 90 ml
- 1 shallot finely chopped
- 2 cloves garlic finely minced
- 2 tbsp chopped fresh parsley 8 grams
- 1/2 tsp ground cumin 1.50 grams
- 1 can white beans 15.5 oz / 440 grams
- sea salt & black pepper
FOR THE SPICY AIOLI
- 1/2 cup low fat mayonnaise 120 grams
- 2 cloves garlic
- 1 tsp hot smoked Spanish paprika 2.50 grams
- 1 tsp lemon juice 5 ml
- 1 tbsp extra virgin olive oil 15 ml
- sea salt & black pepper
Instructions

Add the flour into a large bowl and make a well in the middle, crack in the egg and whisk the egg, then add in the club soda and whisk everything together until you get a creamy batter, then add in the shallot, garlic, parsley, cumin and season with sea salt & black pepper, mix together until well mixed

Drain the can of white beans into a colander and rinse under water, then shake off any excess water, transfer the beans into a bowl and using a potato masher or large fork mash down on the beans, just for a few seconds to slightly break them apart

Add the beans into the bowl with the batter and mix together until well mixed

Heat a large fry pan with a medium heat and add in the olive oil

After a couple of minutes, add in spoonfuls of the batter, all evenly spaced out and in a single layer, cook in batches, fry the fritters for 3 minutes per side or until golden fried, then transfer into a dish with paper towels

Once all the fritters are done make the spicy aioli, add the mayonnaise into a bowl, finely grate in the garlic, add in the hot smoked paprika, lemon juice and olive oil, then season with sea salt & black pepper and whisk together until you get a creamy sauce

Transfer the aioli into a serving dish and decorate the fritters around it, serve warm or at room temperature, enjoy!
