Spicy Garlic Spanish Potatoes | Patatas al Pil Pil Recipe
These Spicy Garlic Spanish Potatoes, known in Spain as Patatas al Pil Pil, are packed with flavors, easy to make and done in 30 minutes. Serve them as a tapas appetizer or even as a side dish, next to some Spanish cod and a salad.
What gives these potatoes that spicy kick is the hot smoked Spanish paprika. You can also use half the amount of chili powder. Either way, the secret is to add just a bit, enough for a spicy kick, as Spanish cooking is not known for having dishes that are too spicy.
To make this dish I used new potatoes, but you can use any potatoes you like. I also peeled the potatoes, as that´s how this dish is typically prepared. However, if you prefer, you can leave the peels on the potatoes.
TIPS & TRICKS to Make this Recipe: I fried the potatoes in extra virgin olive oil. This is what gives this dish that magical flavor. Very important to use a medium heat and nothing higher, otherwise the olive oil will smoke and lose its beautiful flavor.

Spicy Garlic Spanish Potatoes | Patatas al Pil Pil Recipe
Ingredients
- 1/2 cup extra virgin olive oil 125 ml
- 3 potatoes
- 5 cloves garlic
- 1/2 tsp sweet smoked Spanish paprika 1.15 grams
- 1/2 tsp hot smoked Spanish paprika 1.15 grams
- 1/2 cup white wine 120 ml
- pinch sea salt
- dash black pepper
- handful fresh parsley
Instructions

Heat a large fry pan with a medium heat and add in 1/2 cup extra virgin olive oil

Meanwhile, cut 3 medium sized potatoes (peeled & washed) into small pieces that are 1/2 inch (1.25 cm) thick

Add the cut potatoes into the pan with the olive oil, mix together so all the potatoes are coated in the olive oil, mix every 3 to 4 minutes

After 22 to 24 minutes and the potatoes are golden fried, drain into a sieve with a bowl underneath, reserve the olive oil

Using the same pan with the same heat, add in 2 tbsp of the reserved olive oil from the potatoes, after 1 minute add in 5 cloves of garlic thinly sliced, mix with the olive oil, after 1 minute add in 1/2 tsp sweet smoked paprika and 1/2 tsp hot smoked paprika, mix together, then add in 1/2 cup white wine and simmer for 3 minutes, then add in the fried potatoes and season with sea salt & black pepper, mix together until well mixed

Transfer the potatoes into a serving dish and sprinkle with finely chopped parsley, enjoy!
