
CREAMY Butter Beans in Onion Sauce | Quick & EASY One-Pan Recipe
These creamy butter beans in onion sauce are packed with flavors, made with basic everyday ingredients, and done in just 30 minutes. Serve them as a side next to some pan-grilled fish or even as a main course. Either way, they promise to fill you with so much goodness.
To make this recipe, I used jarred butter beans. Which are the same thing as the canned ones. If you can’t find butter beans in your area, you can use other types of white beans. You can also use dried butter beans. Just soak them overnight in plenty of water and then simmer them the following day for 1 to 2 hours or until tender.
To make the onion sauce, I used homemade vegetable broth. However, chicken broth or beef broth can also be used. To flavor the sauce, I used dried oregano and dried thyme. You can mix it up and use different herbs. As well as some crushed red pepper flakes to add a spicy kick.
TIPS & TRICKS to Make this Recipe: You can serve these butter beans warm or even at room temperature. they will hold for up to 3 to 4 days in the fridge in an airtight container. When reheating, just add in some more milk or broth to bring back the creaminess.

CREAMY Butter Beans in Onion Sauce
Ingredients
- 2 tbsp extra virgin olive oil 35 ml
- 1 medium yellow onion (finely chopped)
- 3 cloves garlic (roughly chopped)
- 1 tbsp all purpose flour 9 grams
- 3/4 cup low fat milk 180 ml
- 1/2 cup vegetable broth 120 ml
- 1/2 tsp dried oregano .50 grams
- 1/2 tsp dried thyme .50 grams
- 1 jar cooked butter beans (same as canned) 25 oz / 700 grams
- 2 tsp lemon juice 10 ml
- 2 tbsp grated Manchego cheese 15 grams
- sea salt & black pepper
- chopped parsley for garnish
Instructions

Heat a large fry pan with a medium heat and add in the olive oil

After a couple of minutes add in the chopped onion and garlic, mix continuously, after 5 minutes and the onions are slightly translucent, add in the flour, continue to mix for 2 minutes, then add in the milk, vegetable broth, oregano, and thyme, gently mix continuously for a couple of minutes or until the sauce has slightly thickened

Once the sauce has slightly thickened, about 5 minutes, add in the butter beans (drained and rinsed), and season with salt & pepper, mix together, then lower to a low-medium heat and simmer

After 5 minutes turn off the heat, add in the lemon juice and grated cheese, gently mix together until well mixed

Transfer into serving dishes and top off with chopped parsley, enjoy!
