The BEST Chickpea Burger of Your Life | Quick & EASY Recipe
These Chickpea Burgers are seriously one of the best veggie burgers I have ever tasted in my life. The chickpea patties have a great texture and flavor to them; the recipe is super easy to make, and it’s all done using simple, heart-healthy ingredients.
To make the chickpea patties, I used canned chickpeas. You can also use dried chickpeas if you prefer. Just soak them in plenty of water overnight and then simmer the following day for 1 to 2 hours or until tender.
For the toppings, I added shredded lettuce, tomatoes, red onion, and a simple homemade spicy mayo aioli. Of course, you can change things up and use different toppings if you like. However, this simple combination of ingredients truly takes this burger to the next level.
TIPS & TRICKS to Make this Recipe: The secret to these chickpea patties is to ensure the mixture is well-bound. That way the patties don´t fall apart. Once you have the mixture ready, make sure to squeeze it in your hands before shaping the patties. If you see it´s too dry, add some whisked egg until the desired texture.

The ULTIMATE Chickpea Burger
Ingredients
FOR THE CHICKPEA PATTIES
- 1 can chickpeas 15.5 oz / 440 grams
- 1/3 cup plain bread crumbs 40 grams
- 1 large egg
- 1/4 cup chopped onion 30 grams
- 1 clove garlic (finely grated)
- 1 small carrot (finely grated)
- 2 tbsp chopped parsley 8 grams
- 1/2 tsp sweet smoked Spanish paprika 1.25 grams
- 1/2 tsp ground cumin 1.50 grams
- sea salt & black pepper
FOR THE SPICY MAYO AIOLI
- 1/2 cup low fat mayonnaise 120 grams
- 2 cloves garlic (finely grated)
- 1 tsp hot smoked Spanish paprika 2.50 grams
- 1 tsp lemon juice 5 ml
- 1 tbsp extra virgin olive oil 15 ml
- sea salt & black pepper
EXTRAS
- 3 tbsp extra virgin olive oil 45 ml
- 3 hamburger buns (lightly toasted)
- 1 tomato (thinly sliced)
- 1 small red onion (thinly sliced)
- handful shredded iceberg lettuce
Instructions

Drain the can of chickpeas into a colander and rinse under water, then shake off any excess water and transfer into a large bowl, using a potato masher or large fork, mash down on the chickpeas until they're well mashed

Add the bread crumbs over the mashed chickpeas, crack in the egg, add in the chopped onion, grated garlic, grated carrot, chopped parsley, sweet smoked paprika and cumin, then season with sea salt & black pepper, mix together

Once the mixture is well mixed, push down on it until you end up with a paste-like texture, this is to ensure all the ingredients are well bound, then transfer the mixture onto a clean flat surface and cut into three evenly sized pieces, squeeze each piece in your hand and then shape into ball, using the palm of your hand, gently push down on each ball to shape your patty, about 1 1/2 cm (3/8 inch) thick

Heat a large fry pan with a medium heat and add in the olive oil

After a couple of minutes add in the chickpea patties, all in a single layer and evenly spaced out, fry for 5 minutes per side or until golden fried all around

To make the spicy mayo aioli, add the mayonnaise into a bowl, along with the grated garlic, hot smoked paprika, lemon juice and olive oil, season with sea salt & black pepper and whisk together until you get a creamy sauce

To assemble the burgers, add a dollop of the spicy sauce over the bottom bun, then add in some shredded lettuce, one of the chickpea patties, some sliced tomatoes and some sliced red onion, add another dollop of the spicy sauce on the top bun and place over the burger, enjoy!
