The BEST-EVER Boiled Potatoes | Spanish Patatas Hervidas Recipe
These Spanish Boiled Potatoes, known as Patatas Hervidas con Pimentón y Azafrán, are seriously the best-ever boiled potatoes. They´re packed with flavors, have an incredible melt-in-your-mouth texture and done in just 40 minutes.
These potatoes are the perfect side dish for any meal of the day. From breakfast to dinner, and pair perfectly next to some garlic fried eggs or even some grilled fish.
For this recipe it´s important to use potatoes that are a bit more waxy than starchy. As they hold their shape better when boiled. I used new potatoes, but you can also use yukon gold, golden delight or even red potatoes.
TIPS & TRICKS to Make this Recipe: It took me about 25 minutes to perfectly boil the potatoes. But it can take you less or more time. Either way, you don´t want to over boil them. Otherwise they will start to lose their shape.

Spanish Boiled Potatoes | Patatas Hervidas con Pimentón y Azafrán
Ingredients
- 3 tbsp extra virgin olive oil 45 ml
- 1 onion
- 6 cloves garlic
- 2 1/4 lbs potatoes 1 kilogram
- 1 tsp sweet smoked Spanish paprika 2.30 grams
- 1/4 tsp saffron threads .17 grams
- 3 cups water 720 ml
- 2 sprigs fresh rosemary
- pinch sea salt
- dash black pepper
Instructions

Finely chop the onion, roughly chop the garlic and cut the potatoes (peeled) into large 2 inch (5 cm) thick pieces

Heat a large fry pan or stock pot with a medium heat and add in the olive oil

After a couple of minutes add in the onion and garlic, mix with the olive oil, after 4 minutes and the onion is translucent, add in the chopped potatoes, paprika, saffron and a generous pinch of sea salt and black pepper, mix together, then add in enough water to just barely cover the potatoes, mix together, then add one sprig of fresh rosemary and raise to a high heat

Once the water comes to a boil, place a lid over the pan and lower to a low-medium heat, simmer for 20 to 25 minutes or until the potatoes are just cooked through (you can always pierce one with a toothpick to ensure they are done)

Transfer the boiled potatoes into a large serving dish, pour any of the remaining liquid in the pan over the potatoes and garnish with fresh rosemary, enjoy!

Sadly, these past few years I have not been able to find some decent tasting potatoes where I live here in Canada – even PEI potatoes are missing the mark now. I do not know what is happening to potatoes lately – are they being genetically modified here in North America ?… they just have no taste, whatsoever, like say, compared to fifteen years ago, even. My once beloved Yukon Golds are tasteless these days! I have bought many other types and the same thing -no taste. It’s sad. No amount of herbage, salt etc. makes them better. I sure miss a good old fashioned potato! I think I need to move to Europe where food standards are MUCH higher and better!
