The EASIEST Cake You´ll EVER Make | Spanish Bizcocho de Fresa Recipe
This Spanish Strawberry Cake is filled with flavors, easy to make, where there´s no tricky techniques and it´s all done in a little over 45 minutes. Serve it next to a cup of hot chocolate or even some coffee and tea for an incredible breakfast or dessert.
This cake is known in Spain as Bizcocho de Fresa. It´s typically enjoyed all year, but extra special during the spring and summer months, when strawberries are in season. As it gives the cake an incredible lift of flavors.
To make the batter, I used an electric hand mixer. But you can also use a stand up mixer or even a manual whisk. If you choose the latter, make sure to whisk the eggs vigorously to end up with a light and creamy texture.
TIPS & TRICKS to Make this Recipe: To bake the cake, I used the bake and broil option (bottom + top heat). Very similar to a convection oven. If your oven doesn´t have that function. Just bake the cake until fully cooked through, which might a couple of minutes longer.

Spanish Strawberry Cake | Bizcocho de Fresa
Ingredients
- 3 eggs
- 1 cup granulated sugar 200 grams
- 1/2 cup plain Greek yogurt 125 grams
- 1 1/3 cup all purpose flour 170 grams
- 2 tsp baking powder 8 grams
- 1/4 tsp sea salt 1.5 grams
- 1/3 cup sunflower oil 90 ml
- 1/2 lbs strawberries 200 grams
- 1 tsp olive oil 5 ml
- powdered sugar for garnish
Instructions

Crack the eggs into a large bowl, add in the granulated sugar and Greek yogurt, using an electric mixter mix together until you end up with a light and creamy texture, about 2 minutes

Add in the flour, making sure to run it through a fine sieve as you add it into the bowl to sift the flour, then add in the baking powder, salt and sunflower oil, once again using the electric mixter mix until you end up with a thick and creamy batter, about 2 to 3 minutes

Remove the green leaves from the strawberries (that have already been washed & dried), then cut each strawberry into 4 evenly pieces and then cut off any of the stem

Add the cut strawberries into the batter, using a spatula gently fold the batter until everything is well mixed

Line a round baking pan with parchment paper (I used an 8 inch / 20 cm pan) and brush the sides with olive oil, then add the batter into the pan

Add the baking pan into a preheated oven, bake + broil option (bottom + top heat) 180 C - 355 F

After about 40 minutes the cake should be perfectly cooked, just pierce with a toothpick in the middle, if it comes out cleanly it is ready to go, remove the cake from the oven and let it rest at room temperature

Once the cake is cool enough to handle, remove from the baking pan and transfer into a serving dish

Sprinkle with powdered sugar and serve, enjoy!

my cake came out a bit flat is that how it should be or maybe I didn’t get the egg sugar yoghurt mix right. All other recipes of yours have come out perfect

Easy to make and came out perfect! ¡¡Gracias Albert!!
For healthier options, I used a mild extra virgin olive oil instead of the sunflower oil, and Turbinado sugar instead of refined sugar. To cook I used convection bake set at 355F (although my oven automatically reduces the temperature) and it was done perfectly at 40 minutes.
