Add the olive oil into a small bowl, along with the lemon juice, the clove of garlic finely grated and the parsley, then season with sea salt & black pepper and whisk together until well mixed, set aside
Finely chop the tomatoes, finely chop the onion and finely chop the green bell pepper, then drain the can of olives into a fine sieve and shake off any excess liquid
Add the ingredients into a large bowl, season with sea salt & black pepper, pour in the dressing and gently mix together until well mixed
Serve at room temperature or chilled, it will hold for up to 4 to 5 days in the fridge, enjoy!
